INGREDIENTS
Sauce & Meatballs:
10 basil leaves
1/2 cup (120 milliliters) extra-virgin olive oil
2 garlic cloves, peeled and lightly smashed
1/2 pound (227 grams) ground chuck beef (85% lean)
1/2 pound (227 grams) ground pork
1/2 pound (227 grams) ground veal
1 cup breadcrumbs, preferably Italian-seasoned
1 cup (100 grams) grated Pecorino Romano
1/2 cup (120 milliliters) whole milk
2 large eggs, beaten to blend
1 tablespoon chopped parsley
2 tablespoons coarse salt, divided
2 teaspoons freshly ground black pepper, divided
2 (28-ounce) cans crushed tomatoes
2 tablespoons tomato paste
3 sweet Italian sausages
Pate Brisee & Assembly:
3 cups (360 grams) all-purpose flour, plus more for the surface
1 cup (2 sticks) unsalted butter, cold and cut into pieces
1 tablespoon sugar
1/2 teaspoon kosher salt
2 tablespoons cold water
2 pounds ziti or ziti rigate, cooked for half of the time according to the package directions
4 hard-boiled eggs, thinly sliced
1 pound grated Pecorino Romano, plus more for serving
1 pound shredded mozzarella

Looks so good, love the simple sauce, simple is usually best for tomato sauce, IMO. Seems like a missed opportunity to swish out the tomato cans with that water though!

my mom made a timpano once for easter when i was little but i was too young to remember/help with the amount of work that goes into this!! this is truly a labor of love!! would this still taste good as a vegetarian version without the meat?

That looks great, as a showpiece and as a delicious meal, but I think the traditional fresh lasagna makes more sense than pastry, and the skill level is about the same. ( if you know how to make pasta from scratch of course! )

That looks delicious, but OMG, my Nonna is cringing at poaching the meatballs in the sauce instead of frying them first.

Also, there were no penne tubes in their recipe, just layers of pasta or sometimes a thin egg frittata that looked like pasta sheets.

Anyone who might attempt this should know that it is important to cook your tomato paste in the beginning with a bit of oil for a few minutes before starting your sauce.

@Chris Mike No sir. Having worked in a Greek restaurant we always had to cook the tomato paste for about 5 minutes until it darkened first when making Moussaka (Moose Ca Ca) and you can google "should tomato paste be cooked"

@@GregCurtin45 You can caramelize tomato paste a bit to give it a bit more sweetness, but it's not exactly required. It depends on what kind of flavor you're going for.

I... think maybe use other noodles than macaroni, I thought this was vivisected mutant organs or something when I saw it out of the corner of my eye. The recipe really does sound tasty, but uh, as is only really appropriate for Halloween. Which, sure, March, (insert tumblr joke), but still lol.
