There is something about Tacos that we have always enjoyed and we know you all love them too. Tacos are little a little parcel of joy that carries delish food to your tastebuds. This tempeh is cooked in a delicious homemade Tinga sauce, served on corn taco tortillas with shredded lettuce / smashed lime avocado and spicy salsa.
Ingredients:
Tinga Tempeh:
1 tbsp olive oil
200g tempeh
1 tbsp chipotle in adobo or chipotle paste, heaped
1 onion
2 garlic cloves
3 large vine tomatoes
1 tsp cumin
½ tsp cinnamon
1 tsp maple syrup
½ vegetable stock cube
150ml water
Guacamole:
2 large avocados
4 spring onions
20g coriander leaves
1 tbsp jalapenos from a jar
Juice of 1 lime
Salt to taste
To Serve:
8 corn tortillas
1 red chilli
10g coriander leaves
2 limes
½ iceberg lettuce
