Tomahawk Ribeye! Frontgate Gas Grill! Perfect Reverse Sear!

Repeat of a previous cook detailed time and temps! Great Tomahawks!
• Started with two 32 oz Tomahawk Ribeyes, Prime Cut.
• Used Kosmo’s SPG on all sides of the Tomahawks and put in refrigerator for 24 hours to dry brine them.
• Set up Jack’s Frontgate gas grill for indirect cooking. He has left, right and center burners. We had the center burner on high.
• Placed the two tomahawks on the indirect left and right side and probed them for temps. When they reached 80 degrees, I flipped them.
• When they reached 115 degrees, I removed them.
• Turned all burners on high and started to sear them. Once we had a great sear, they were removed and we let rest for 10 minutes.
Summary: Doing these on the gas grill turned out great! We did start with the Prime Tomahawk Rib Eyes, so that helped. These were perfect with a great sear.

Harmon Heat Thanks Justen! We have cooked tomahawks on every grill we have! We try to show how to on each of them to help everyone! I like charcoal, but my wife only wants me to cook her steak on the gas grill. When we have steak night, I have 2 grills going! One for me and one for my wife! LOL

Hi mate from Australia!!! Just followed your instructions for our first Tomahawks on the BBQ....but....you fail to mention your temperatures are in Fahrenheit!!! Here is Oz we are more metric and I did over cook my first attempt until I realised that your temperature guide was F and not C!! Oh well, I will get them perfect next time...many thanks...Stu

I havent use my gass grill in like 3 years. I just pulled it out of storage. Main reason is because i just started the carnivore diet 2 weeks ago and the charcoal is getting a little pricey. Im gonna make this tonight following your method 😊

Hopefully they turned out great for you! Gas grill cooks actually get a decent amount of views, but I do use mine for weeknight quick cooks and usually have the charcoal on the weekends when I have more time. We just did this same cook on a new gas grill that will be out soon! Cheers!

Thanks for watching Johnny! We actually shot his video for the timing because on our last video, many comment were not as nice as your asking for the timing! LOL With just the center burner on the total indirect time was about 1 hour. We did flip these when they got to 80F and then pulled them at around 115F. We seared in 1 minute intervals and did this 5 times. I usually only do this step 4 times, but it looked like it needed a little more. Watching the temps is the most important step, but hopefully this helps to get you close to how long this takes! If you have any other questions, please let me know! Cheers!

How do you use two probes? Does one system handle 2 or did you uses two separate sensors or use one steak as your guide?

Thanks for watching! In this cook I used 2 of the Meater+ so each steak had a Meater probe. These tell you the meat and ambient all in one. They are connected to your phone and you can have multiple probes going at the same time. They also have the Meater block which has 4 probes all linked to the phone through Wi-Fi. Hope that helped! DrTasteGoodBBQ I just put enough kosher salt like I would eat. For a thick steak it can take a good pinch or 2 on each side. I have seen some people really coat the steak, that would be too much for me. Funny you say bacon, I have 20 pounds curing right now. Will be rinsing tomorrow and smoking on Sunday! Correct, we had the center burner on for the entire indirect part of this cook and once we pulled them of to get the grill very hot for searing. Not sure how your grill is set up, but just want the inside running around 250 to 300F to let the steaks warm up to about 110 to 115 so the sear will take it to about 125 to 130 for medium rare. If you like it at a different finished temp, warm it up to about 10 to 15 degrees short of your finished temp so the sear will finish them off. Hope that helps! Cheers!

Never did the salt or spg overnight. Going to have to try that. My wife hates garlic so probably salt and pepper on hers overnight.

d307p I often just use kosher salt overnight and add what you want the next day before the cook. Either way, the dry brine really makes a difference.

This was the original video we did and had complaints that we did not mention the indirect time, so I used the Meater to track that. ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-vZV1LgwyXrM.html This one we used wired probes. I think probing the steak is the most important step, so doesn’t matter what type, just so you can monitor the temp. Hope that helps! Cheers!

We actually had everything on high to preheat and clean off the grates. We turned the 2 outer burners off and left the center burner on high for doing these indirect. The temp for the indirect cook was about 275 to 300 on the Meater probe. The indirect cooking time was about 1 hours. Hope that is what you were looking for? This was an older video, so I watched it again and not sure what temps you go for, but cook them the way you like them. We did show the temps on these and before it was done searing we showed the temp at 125F degrees and know this rested to 130F. Rare is 125 and medium rare is 135 and I mentioned this was at the low end of medium rare. Not close to raw! I am not a chef, but I do let the temp probes tell me when it is the way we like them.
