Tomato & Feta Phyllo Tart: A Greek Summertime Tart

Summer tomatoes and the creamy feta cheese spread make this savory phyllo tart the perfect lunch. Also great as an appetizer for your summer dinner party. Simple and delicious.

INGREDIENTS
For the Crust:
• 8 sheets (#4) phyllo
• 4 oz (226 g) salted butter, melted
• Black sesame seeds
For the Filling:
• 8 oz (230 g) feta cheese, crumbled
• 8 oz (230 g) ricotta cheese
• 1-2 tablespoons finely chopped mint
• 3-4 tablespoons olive oil
• Shredded Gouda, Gruyere, or Mozzarella cheese
• Black pepper, to taste
The vegetables:
• Bell pepper slices
• Tomato slices
• ¼ cup olive oil
• Salt
• Oregano
INSTRUCTIONS
Preheat the oven to 400 °F, 200 °C.
Make the filling: Combine all of the filling ingredients in a bowl and mix them together. Taste and adjust seasoning if desired.
Assemble the tart:
Line a half sheet pan with parchment paper.
Layer the phyllo sheets on top of the parchment and drizzle melted butter between each sheet.
Spread the filling on top of the final sheet of phyllo making sure to leave a border. About 1 and ½ inches.
Top with the bell peppers.
Combine the olive oil with some salt and mix it together. Brush the peppers with the oil.
Top with tomato slices and brush them with the oil.
Sprinkle some dried oregano over the tomatoes.
Fold the sides of the phyllo over to create a border.
Brush with the remaining melted butter and sprinkle the border with some sesame seeds.
Bake on the center rack of the oven for 45-50 minutes or until golden.
Set aside to cool for 10 minutes and serve.
NOTES
Add your favorite pizza toppings to the tart. Zucchini slices, olives, caramelized onions, and mushrooms work well. Feel free to substitute some homemade pesto for the cheese spread.

I must say that was a memorable dish. I just happened to have most of the ingredients on hand and only needed a quick stop for the Ricotta and mozzarella. I keep Bulgarian feta in stock. I made Spanakopita rolls last week and had a roll of phyllo in the fridge. Some Campari tomatoes and mint i purchased yesterday on a whim. I had those multicolored snacking peppers and some green cracked olives. Some sliced mushrooms topped it off. No black sesame seeds but i didn't miss them because the complexity of fresh flavors was glorious. It was better than the mere sum of its parts. Capers and basil would work but i just sprinkled some Greek Oregano on top. I wish i could kiss you. My wife was impressed and really enjoyed it too. Thank you for this last minute gem.

I'm going to make theses as mini tarts for this weekend and serve as an appetizer. I think I'll use the premade mini phyllo tart cups to make my life easier.

I made this and it was amazing. The cheese with the mint. So good. Not thing missing phyllo on bottom was a bit soggy. Think I should have cooked a bit longer

Beautiful! What if you grate some fresh garlic into the melted butter before drizzling? Would that add a nice layer of flavor or would it be overkill with everything else going on?

Great recipe. Thank you for sharing! I have just one question - how can I save the rest of the phyllo sheets? In a package normally there are about 20 sheets in my country. If I use just 8, is there a way to save the rest for another recipe later ( in the next couple of days for example). Thank you :)

Roll the leftover phyllo sheets into a scroll and wrap them in plastic wrap. You can put them back in the box and refrigerate for a week or two.

Great recipe and simple I have no idea why is spreaded over 10 min of shooting , unnecessary to watch all those 8 sheets of phillo getting buttered , all lbs of tomatoes getting chopped , we get the idea! Wow too much talking about every little aspect!
