A+ easy recipe. Foolproof too. Somehow I mistakenly thought the recipe calls for Vegetable Beef soup, and I had already added it.. So I tossed in some frozen peas and carrots and went for it. I'll try it with the correct Vegetable Soup next time, but still, it was fantastic and easy. Thanks again.
That's awesome! I'm thrilled you liked it. Honestly, in a pinch I think I've used the same soup and it turned out great. I will say I do love the bits of potato and ABC noodles in the Vegetable soup from the recipe. I'm so happy it worked out for you! 😊
my mom would be 90 and she made this recipe minus the can of tomato sauce. It was always a hit and I still make it to this day….Thanks for sharing, brought back many wonderful memories 😊
I know what you mean, I love onions, too. This 1960s recipe didn't call for them; my husband, who is not an onion fan, appreciated that. But hey, go ahead and add some chopped onions, that's the beauty of meatloaf you can add anything you like..😊
My grandmother and mom both made this! It's nostalgic for me, too. If you ever want to try a tweak, mix your half cup of ketchup with 2 Tablespoons of brown sugar and 1 teaspoon of dry mustard. It's a small change, but yummy 😋
I had absolutely no bread in the house, no crackers. I racked my brain, and thought, what about dried oats. Never looked back. Egg, no egg. milk, no milk. All good recipes are trial and error.
Thank you for sharing this easy recipe for future generations. I love old recipes from random sources, they are winners. The sloppy Joe recipe I have, was from someone's power bill. My friend's kid requested it on his birthday!
I'm so glad you enjoyed this. It’s amazing how special memories and recipes can be passed down in unexpected ways. I love the old recipes too! That sloppy Joe recipe sounds like a winner! 😊
Damn I miss going to the truck stops and eating there. I use to be a truck driver. I drove all over the U.S. been through every state in the United States. Lots of fun had lots of great times. I sure do miss being on the road. But now I'm currently handicapped I'm partially blind in my right eye from a stroke I had that almost killed me it put me on life support for 3 whole months having hoses and tubes a breathing tube down my throat. The doctor told my family that I'm a miracle to be alive because he thought I was going to die during surgery. So he was very surprised that I survived. Hopefully one day I can get my vision fixed so I can drive again then return back to being a truck driver. I sure do miss being on the road. Thanks for very much for sharing this recipe. I'm definitely going to try this as I do miss the truck stop foods. So much great foods there. 🤘😎🥃🍻💯💪🫵🔥
God bless you! We pray you have a complete recovery so you can get back on the road again. There's something extra tasty about truck-stop restaurants; they genuinely specialize in comfort foods. We are very thankful to all our truckers; they truly keep our country moving! My family has found they are always ready to help you out when you need it. I hope you enjoy this recipe.🙏 😊
@ComfortsofHomeTV-zr7qc I'll definitely enjoy cooking this recipe so I can show them how delicious truck stop food really is. So delicious. I miss staying at truck stops over night to get my sleep before getting back on the road and going down the highway enjoying all the nice scenery I use to see as a truck driver. Lots of great times and fun.
When I was young mom would use bread crumbs or crackers. Years later the wife was making us a meatloaf only to discover no crumbs or cracker. She was frantic not knowing what to do. I came to the kitchen to try and help. Checked the cupboard and found a bag of oatmeal. Hand it to her, “Here just use this.” She was sceptical but not having any other clear options she used the oatmeal. Well that was twenty years ago now. Haven’t had at meatloaf since that didn’t have oatmeal in it. The oatmeal not only thickens and binds but adds a bit of a lovely “nutty” flavour to it.
@@ComfortsofHomeTV-zr7qc one note further on the oatmeal. It's very filling! Which means you don't need as much. Trying to remember that when it in front of me is my greatest difficulty! 🙄
The only way I eat meatloaf is with ketchup and brown sugar on top. My mother made it this way for years. The brown sugar and ketchup make the meatloaf out of this world delicious. Try it, you will love it.
@@JimmyHandtrixx Oh yes. But got to try things. Break out and EXPLORE new things. Why i have a taste cup, to make things. I found that beer in SALSA is EXCELLENT YUM brings out the flavor of things in it. It also cuts down on the long burning of hot peppers. just 1 of many taste test, with my cup
Wow, I never heard of putting a can of vegetable soup in a meatloaf recipe. My wife is going to make meatloaf tomorrow and I'll suggest she try this recipe.
That's great. Apparently, the can of soup was an idea from the Depression era. It adds so much flavor, and I love the bits of alphabet noodles and potatoes. 😊
@@ComfortsofHomeTV-zr7qc Oh my gosh it turned out great! I made 2 changes I must stay Gluten free so I used GF crackers and added some onions. Thanks so much!
Thank you so much for sharing this family favorite of yours! I am a meatloaf lover and this looks like it may be the best one ever. I’m excited to try it!
I love meatloaf no matter what the recipe is, some ARE better than others though. If I'm in a diner I always order it, but you'd be surprised how few diners have it on their menu( I guess they forgot this is the dish you could hide many of your "about to expire" leftovers and other ingredients ) Oats are my thickener of choice, and I make a finely-ground mixture of onions, carrots and celery. Lots of Worcestershire sauce, or Vegemite if I have any on hand, to up the savoriness. Formed freehand on a rimmed baking sheet, as opposed to packing it into a loaf pan where it steams rather than bakes, gotta' have that crust. My grandmother used to glaze, and serve, it with cream of mushroom soup, a nice alternative to the usual tomato-y glazes that are usually used. She'd just open the can, use some and place what remained in the oven as the meatloaf baked. Gotta' have mashed and stewed tomatoes as a go-with. OR, if you want a really stellar meal, make some creamed peas. Outstanding!!! And not to be forgotten, dream about meatloaf sandwiches for a few lunches, either sliced and used cold or sautéed in a little butter until crusty. Great this time of year with a slice or two of terrific Summer tomatoes on wholewheat toast. Mmmmm..... Thanks much for the truck stop recipe, I will surely try it one of these days.
Leftovers! I should have mentioned the amazing leftovers you get with this meatloaf. We enjoyed this for a few days after, and it made easy, delicious lunches. Whenever I make a beef recipe, I love adding plenty of Worcestershire sauce. I've been curious to try the Vegemite; I'll just have to do that. It's true that it's hard to find meatloaf at a restaurant these days. The only place I have found it is at Cracker Barrel. Truck stops have exceled at serving up delicious comfort food. I also agree it has to have the "crust"; that's why we bake it on a cookie sheet or large 9x13 baking dish for the airflow. I will also have to make some creamed peas that sounds so good. You have so many great ideas, I appreciate you sharing them. I hope you enjoy making this recipe. 😊
I swear, I was grown before I knew meat loaf could have meat in it! I have a friend who cannot tolerate onions in most form; if I know he's coming to eat, I can use either green onions or onion powder, he loves the flavor but his digestion can't handle the texture or something. Also I absolutely cannot cook without garlic. Adding this one to my repertoire for sure! Thanks.
Thank you so much for sharing that! My husband feels the same way about onions. He loves the flavor, but he very strongly dislikes the crunch texture of onions in his food. I totally agree with you-garlic is a must-have in the kitchen! I hope you enjoy this recipe as much as I do. 😊
The PETRO, T/A's and FLYING J'S put out some EXCELLENT FOODS! Those are the 3 most i stop to eat at. Plus some of them has POPEYES Chicken YUM > Some of them have a seafood buffet.. plus you can always get a NICE GOOD STEAK AT THEM TO
I love onions, too. This 1960s recipe didn't call for them; my husband, who is not an onion fan, appreciated that. I'm sure this would taste great with added onions, that's the beauty of meatloaf you can add anything you like..😊
It sounds like a great way to add a touch of sweetness. Apples are a great addition to so many dishes; I love them in Thanksgiving dressing and pork chop stuffing.
That's great! I hope you enjoy it. I did not drain the soup. It's thick and condensed, you'll just need to scoop it out with a spoon or silicone spatula. I hope that helps. 😊
NEVER EVER USE KETCHUP!!! Instead, use either Heinz chili sauce or if you can find it "Homade Chili Sauce" It comes in a baseball-type of bottle. Trust me you'll never use Ketchup again.
I'm glad you asked; this recipe does not call for additional salt due to the salt content already incorporated in the can of soup, worcestershire sauce and the Saltine crackers. We've found there is so much flavor that you don't need additional salt added. You certainly can add pepper, but we find it has so much flavor from the soup and worcestershire sauce, that we don't miss it. I hope that helps! 😊
The original 1960's recipe didn't call for extra salt because the soup, Worcestershire sauce, and Saltine crackers already provided enough seasoning. We've found that the flavor is well-balanced without additional salt, though you can definitely add pepper if you like. The soup and Worcestershire sauce give it plenty of taste on their own. Hope that clarifies things!
"Totally understand-I'm a big fan of onions myself! This 1960s recipe doesn’t include them, as my husband isn’t an onion lover. But feel free to add chopped onions; that’s the great thing about meatloaf-it's versatile and can be customized to your taste!"
