Hi Darius. Question: I never understood why chefs use an oil whether it be olive oil or vegetable oil to cook things like ground beef or Italian sausage. To me, the meats seem oily enough and the addition of the oil serves no purpose other than to make the dish even oilier. It’s obviously necessary because I see all the great chefs (I’m including you in that because I love all your recipes) do it. Not sure if you’ll ever come across this comment but if you do I hope you’ll answer. I’m just trying to expand my cooking knowledge so I hope you can help me out. ❤️
