Ingredients:
1 lb ground beef
1 egg
1/2 diced onion
1 spoonful mayo
1/2 tsp garlic powder
Pinch of salt and pepper
1/4 cup panko breadcrumbs
1 stick of butter
1/3 to 1/2 cup flour
2 cups beef stock
1 tbsp soy sauce
2 tsp Worcestershire sauce
Sliced portobello mushrooms
Sliced onions
Cooking oil
Rice
Sunny side up eggs
Green onions (for garnish)
Red pickled ginger (optional, for garnish)
Directions:
1. In a mixing bowl, combine ground beef, egg, diced onion, mayo, garlic powder, salt, pepper, and panko breadcrumbs. Form the mixture into patties and set aside.
2.In a pan, melt butter over medium-high heat. Stir in flour to create a golden brown roux. Gradually whisk in beef stock until smooth.
3. Add soy sauce, Worcestershire sauce, and pepper to the gravy. Reduce heat to medium-low and continue cooking until desired thickness is reached.
4. In another pan, heat cooking oil and sauté sliced portobello mushrooms and onions until tender and slightly browned. Set aside.
5. Cook the beef patties to your preferred level of doneness, seasoning with salt while cooking.
6. Assemble the Loco Moco bowls by placing a serving of rice in the center, followed by sautéed mushrooms and onions, cooked beef patties, sunny side up eggs, and a generous amount of gravy.
7. Garnish with chopped green onions and red pickled ginger if desired.
