The interviewer was a perfect fit. Mangieri is an eccentric, a perfectionist and a professional, he deserves an interviewer that really gives a shit and knows what he is asking and talking about. You can see that Mangieri is really grateful for the true, unfiltered and passionate attention. Very wholesome and intriguing to watch!
there is less of the dairy fat coating the tongue. its why adding butter or cream to sauces coats the palate, the cheese is doing a similar thing.the flavor is more clear and water based vs creamy fat based. its like the equivalent of a shio ramen vs a tonkotsu style ramen. if you ever wash your hands with good olive oil just the addition of water will allow the oil to leave your hands. the cheaper oils cling to your hands and you need soap to remove them. this is a really great series of interviews.
