Bulgur Pilaf with Black Beans: A Flavorful and Nutrient-Rich Middle Eastern Dish
Bulgur pilaf is a popular dish in Turkey, Lebanon, and Syria. It's a variation of the classic pilaf, where rice is replaced with bulgur, a cereal made from partially cooked, cracked, and dried durum wheat.
A Simple Yet Delicious Recipe
Join me in preparing a simple yet delicious recipe for bulgur pilaf with black beans. The fiber-rich bulgur combined with protein-packed black beans, along with other vegetables and aromatic spices, creates a meal that will energize you and keep you feeling full for a longer period.
Served with pickled cucumbers and probiotic-rich yogurt, this dish is perfect for lunch or dinner.
Ingredients:
2 cups bulgur
2 1/2 cups cooked black beans
2 onions, chopped
2 tablespoons olive oil
4 cloves garlic, minced
2 tablespoons hot pepper paste
2 tablespoons tomato paste
1 carrot, diced
1 tablespoon dried mint
1 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon chili powder
1 teaspoon black pepper
1 teaspoon salt
4 cups water
1 bunch parsley, chopped
Pickled cucumbers and yogurt for serving
Instructions:
1. In a large pot, heat olive oil over medium heat. Add chopped onions and sauté for a few minutes until softened.
2. Add minced garlic and continue sautéing for another minute.
3. Stir in hot paper paste and tomato paste, mixing well with the onions and garlic.
4. Add diced carrot, cooked black beans, and bulgur. Season with dried mint, oregano, thyme, chili powder, salt, and black pepper.
5. Pour in the water, ensuring it covers the bulgur by about 2 cm. Adjust the amount of water if necessary.
6. Bring to a boil, then reduce heat to low and simmer for 10-15 minutes.
7. Turn off the heat and let the pilaf rest for an additional 10 minutes.
8. Stir in chopped parsley and gently mix for a fluffy texture.
9. Serve warm with yogurt and pickled cucumbers. Enjoy!
