Vegan Banh Mi Recipe | HOW TO MAKE VIETNAMESE Bánh Mì SANDWICH

LAY HO MA everyone! I'm Wil Yeung. Join me in today's incredible episode on how to make vegan banh mi (or Bánh mì)! This delicious Vietnamese sandwich is not only easy to make (like all my no BS vegan recipes!), but you can take it with you on the go! I absolutely love the taste of fresh herbs and veggies mixed in with the simple, but complex flavours of Vietnam.
Ingredients:
extra firm tofu
small baguette (or premium hot dog buns!)
3 to 4 carrots
1 to 3 fresh jalapeños
1 English cucumber
1 tbsp cane sugar
1 tbsp salt
1 tbsp chilli flakes
juice from 2 lemons
a few sprigs of cilantro
sriracha
salt and pepper
Directions:
1. preheat your oven to 325F
2. Pat dry with a paper towel, and slice them into small rectangles
3. place them on a baking sheet, and season with salt and pepper
4. bake your tofu for 20-25min
5. julianne your cucumber
6. shred your carrots with a grater or food processor
7. in a mixing bowl, add cane sugar, salt, chilli flakes, and lemon juice (using a sieve to catch the seeds)
8. stir the marinade to dissolve the sugar
9. add the carrots, toss, and let it marinate (longer the better!)
10. slice your bread and toast them in the oven 2min before your tofu is done
11. once your tofu is done, start assembling your sandwiches!
12. start with your cucumber, then tofu, then carrots, then some sriracha, jalapeños, and some cilantro
13. that's it, enjoy!

If you're making this for a packed lunch, I've found it's a good idea to the deseed the cucumber, salt it and pat it dry. Else the bottom bun will get way too soggy.

First of all: I love your kitchen. I love especially your stove!!! Watching you, is not only about your wonderful creations but everything in your surrounding gives such a nice clean feel to it. @@mytravls It depends where you live.... Big/capital cities around the world usually have some french bakers (boulangerie). But then, if it's rare in your country, it might be expensive, while if it's common (the most common being in France where the baguette price is regulated by the government) it's cheap.

Banh mi's are one of my absolute fav sammy's. I love all the flavours, I think it really helps that the cilantro is on it too. I would never think to put herbs on a sammy, but I love it!

Kudo for getting the spelling to “bánh mì” correctly! If you want to go a step further, vegan sandwich is translated into bánh mì chay in Vietnamese. “Chay” indicates that the food/dish is vegan. (I held my breath when you were shredding the carrots.)

This does look great - and I am a great supporter of all that jalapeno goodness - but... no tomato, no lettuce, no spring onion, no daikon with a splash of vinegar in that carrot mix, no squirty-squirt of tamari. So much goodness missed out on! But, a great, quick version without frills, if you're in a hurry. Thanks for sharing!

I love banh mi, crunch & fresh with explosion of flavours. Chasui or teriaki tofu would have been my preference. I also like to add dakon to the pickles & drizzel some braggs aminos in sandwich to adds umami.

Good recipe with easily available ingredients. But the video can be shortened to 3 mins. For a tastier but non-vegan version, you can substitute tofu with paneer (cottage cheese). Sprinkle paneer strips very lightly with turmeric powder, coriander powder, and salt. Mix well and let it rest for 5 mins. Sauté the marinated paneer on a greased pan until golden brown and add it to the banh mi.

Wonderful! As I am a bit fussy about bread, I would try to use homemade whole wheat flat bread (it can be cooked in a pan) and add a bit of homemade vegan mayonnaise (just put bits of tofu in a blender, add some lemon juice and seed oil). I can't cook at the moment but as soon as God heals me from this health condition, I'm definitely trying your recipes Wil. I'm Italian but I live in Cambodia, cooking here is like cooking in Heaven. 😀😁😉

I feel like the tofu needs a marinade of some kind. Plane seems, well too plane. Maybe just use the marinade thats on the carrots. There is a Vietnamese sandwich shop near me and they marinade their tofu for their bah mu in something. I don’t know what they do but it’s super flavorful. It’s yellow, so I’m thinking there is some turmeric. Maybe salt, suger, lemon, chili, and turmeric, and oil. Thoughts?.
