A vegan Flemish carbonade is possible! After the bourguignon and the blanquette from my book, I wanted to veganize this classic from the North of France and Belgium.
The result is greedy, tasty and syrupy. I like it a lot and I hope you will like this recipe too.

•• Special seitan for carbonade ••
75 g cooked red beans
125ml vegetable stock
1 tbsp olive oil
1 tsp brown miso
1/2 tbsp tamari
25ml beer
125g wheat gluten
10 g chickpea flour
10 g malted yeast
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion semolina
• For the broth •
1 L light vegetable broth
1 tbsp olive oil
3 tbsp tamari
1 tbsp brown miso
100ml beer
1 bouquet garni
Start by blending the red beans with the vegetable broth, olive oil, brown miso, tamari and beer.
Mix the dry ingredients and add the liquid ingredients then knead, preferably with a kneading robot, for 8 minutes in order to tighten the fiber.
Then cut the seitan (which is very sticky, that's normal) into 2-3 cm pieces (the seitan doubles in volume when cooked).
Prepare the broth by mixing the ingredients together. Arrange your pieces of seitan in the broth, lower the heat to low so that the water makes a "blop blop" from time to time and cook for ~30 minutes.
Once cooked, reserve it without the juice if you use it immediately or with its juice if you keep it in the refrigerator. NB: seitan can also be frozen.

For 4 to 5 people
150g medium PST
3 tbsp malted yeast
1 tbsp powdered vegetable broth
1 tbsp brown miso
100ml beer
1 tbsp cider vinegar
1.2L water
2 tbsp neutral oil
200 g smoked tofu (almond-sesame)
2 tbsp tamari
1 tbsp neutral oil
3 onions
4 shallots
2 tbsp margarine
2 tbsp olive oil
3 cloves of garlic
30g brown sugar
75 ml cider vinegar
30g flour
1.3 L beer (half amber, half blonde)
1 bouquet garni
6 slices of gingerbread without honey
Mustard
Salt, pepper to taste
