This pumpkin bread recipe is from Well Plated and uses applesauce and maple syrup, instead of oil and sugar. It's moist and not super sweet. I made it gluten-free by using oat flour, or you could use Bob's Red Mill All Purpose Gluten-Free Flour. I cooked it 90 minutes. Make sure you check it with a toothpick before taking it out of the oven, to make sure it's baked through completely. You could omit the 1/4 cup plant milk and see if it help reduce the cooking time.
