Stir Fried Udon Noodles 2 ways
- Original & Spicy Yaki Udon
(VEGAN)
INGREDIENTS
For The Sauce
4.5 Tbsp Soy sauce
2 Tbsp Water
2 Tbsp White vinegar
2 Tbsp Brown rice syrup
1 Tbsp Sesame oil
For The Original Udon Noodles
2 Tbsp Vegetable oil
1/2 cup Scallion (chopped)
1 clove Garlic (sliced)
1/2 cup Red onion (sliced)
1/2 cup Carrot (julienned)
1/2 cup Red paprika (sliced)
1/2 cup Yellow paprika (sliced)
Half of the sauce
1 packet Udon noodles
100 g Mung bean sprout
Garnish : Chopped scallion, Sesame seeds
For The Spicy Udon Noodles
2 Tbsp Vegetable oil
1/2 cup Scallion (chopped)
1 clove Garlic (sliced)
1/2 cup Red onion (sliced)
3-5 Peri peri
1 tsp Gochugaru (Korean red chili powder or Cayenne pepper powder)
1/2 cup Carrot (julienned)
1/2 cup Snow pea
1/2 cup Red paprika (sliced)
Half of the sauce
1 packet Udon noodles
100 g Mung bean sprout
Garnish : Vegan mayonnaise, Chopped scallion, Sesame seeds
PREPARATION
1. Prepare your vegetables and udon noodles.
2. Mix up the sauce by combining all the ingredients in a small bowl and set aside.
3. In a large frying pan or wok, heat oil over medium-high heat. Add scallion and cook for 30 seconds. Add garlic and onions and cook for a minute.
4. Add peri peri, gochugaru and cook for 30 seconds.
* Optional for the spicy udon noodles
5. Add your choice of vegetables and fry well. Add the sauce to boil.
6. When the sauce boils, add udon noodles and stir fry until the noodles absorb the sauce.
7. Add mung bean sprout and fry for 45 seconds.
8. Place the noodles in a bowl or plate and garnish with vegan mayonnaise, additional chopped scallions and sesame seeds.
9. Enjoy.
