INGREDIENTS FOR 10 PEOPLE
700 g of durum wheat noodles
500 g of buffalo ricotta
300 g of minced veal
300 g of minced pork
1.5 liters of tomato sauce
500 g of buffalo mozzarella
100 g of grated Parmesan cheese
1 glass of red wine
1 stalk of celery
1 piece of onion
1 small carrot
1 clove of garlic
Extra virgin olive oil to taste
Salt up to taste
Black pepper to taste
First, finely chop the celery, carrot and onion, then peel a clove of garlic, put 3-4 tablespoons of extra virgin olive oil in a pan or wok and fry. When the onion is golden, remove the garlic clove and add the meat. Brown it for about ten minutes on high heat, then when its juices have dried, blend with the red wine and leave on high heat to evaporate the wine. When the wine has evaporated, add the tomato sauce, season with salt, pepper if you want and cook for 20-25 minutes over low heat. In the meantime, put a pot of water on the stove, add lightly salt and wait for it to come to a boil. Finely chop the mozzarella and set aside. Put the ricotta in a container and dilute it with a couple of ladles of tomato sauce (the one that is cooking with the meat), mix and then add salt, pepper and grated Parmesan cheese. When the water boils, add the pasta and cook it for 3-4 minutes at the most, then drain it. While the pasta drips into the colander, put a couple of ladles of tomato sauce on the bottom of the baking sheet, put half or all of the pasta, do as you like and then add a part of the cut mozzarella, stir, then put the ricotta, mix and then put the tomato sauce and mix well. Above, before baking, sprinkle with plenty of Parmesan cheese and bake for 25-30 minutes in a preheated static oven at 180 ° C. At the end of cooking, if you want to create a little crust, let it sit under the grill for 4-5 minutes.
