Wat Tan Hor (SILKY EGG HOR FUN WITH PRAWNS)
Ingredients:
450g of Kuey Teow
Tips to make the Kuey Teow in a great charred (wok hei):
Heat up 2 tablespoons of cooking oil in a wok over medium high heat. When the wok is hot, add in the Kuey Teow, pre-flavoured with some dark soya sauce and light soya sauce. And then keep on stirring for 3 to 5 minutes until the Kuey Teow is slightly charred, then transfer to a plate.
Gravy Ingredients:
White portion of fresh spring onion
Some chopped garlics
Some chopped gingers
1 big bowl of homemade pork broth
Some choy sum (vegetables)
5 tiger prawns (deshelled and leave the head and tail)
Some pork slices (marinated with salt, rice cooking wine and corn-starch)
Some pork livers (marinated with salt, rice cooking wine and corn-starch)
Some fried fish cakes, sliced
3 teaspoons of corn-starch solution
2 chicken eggs (beat the eggs)
Seasoning:
1 tablespoon of oyster sauce
1 round of light soya sauce
Few drops of Ong Ky premium fish sauce
Pinch of salt
Pinch of sugar
A little bit of Shaoxing cooking wine
Few dashes of white pepper
Some sesame oil
Garnishing:
Chopped spring onions
Pork crackling
Few dashes of white pepper

Tq ! Ah Pa. Another useful tip by using dark soya sauce and light soya sauce on the kuey teow before "charring" it which I didn't do. Usuually I just "charred" it as it is.🙂 Ah Pa, will appreciate if you will do the "sai yong choy tong" as previously requested.😄😊Tq in advance!

How do you stop minced garlic and ginger from splattering everywhere when you put it in the wok?

The mince shouldn’t contain too much liquid. Or just use roughly chopped garlic/ginger instead of mince.
