Singapore Hor Fun Noodles | wok hei rice noodles in egg gravy

Today we're making Hor Fun Noodles, stir fried rice noodles in a slurpy, thick egg gravy that is a hawker classic in Singapore. This is a staple is zi char stalls here.
Ingredients:
Noodles
- 400 grams Flat Rice Noodles
- 1 tbsp Light Soy Sauce
- 1 tbsp Dark Soy Sauce or Kicap Manis
Egg Gravy:
- 2 Cloves Chopped Garlic
- 1 inch Ginger
- 800ml Chicken Stock
- 2 tbsps Oyster Sauce
- 2 tbsps Light Soy Sauce
- 1 tsp sugar
- Cornstarch slurry* (1 tbsp cornstarch + 2-3 tbsps water)
- 200 grams Protein of Choice: Chicken, prawns and crabsticks
- 1/2 a carrot
- Chye Sim or Leafy Vegetable of choice
- 2 Eggs
*Note: The cornstarch slurry is main thickening ingredient for this dish. My measurement of 1 tbsp cornstarch and water was enough to thicken my gravy to this consistency. If yours don't thicken, don't panic - prepare another mixture of cornstarch slurry, that should do the trick.

OMG, these Noodles look Super Delicious!! The idea of the egg gravy is just Spectacular, I have never tried that before! This soup is really Nutritious and is perfect for the Cold Winters!! Incredible work making this...

Ok...Thats exactly what I'm having for lunch. Thanks for the upload...it looks like restaurant grade. I would "wok hei" my noodles more though to give it a really good smoky flavor to it.

omggg i love kolo mee! i dont at the moment, but let me hunt :D to me it's about the thin thin curl curl noodles... not that easy to find here (singapore) and i dont know how to make fresh noodles haha. maybe i will try with wantan noodles hmm

@@NomadettEats no worries 😃when you get chance. We don’t get it here in Canada, not the authentic local street food kolo mee. Or even satays (cost arm and a leg 😏but still not like back there) I do miss the noodles, satay, chee cheong fun with the red chili sweet sauce, soon kueh and many more😌 If you happen to have the red sauce recipe, please do a video on it😊thank you so much. I miss Singapore too. Was there 4 yrs ago. Such beautiful place with lots to do to see and to eat🥰

yes. not necessary but good practice. Usually the fresh noodles will have a layer of oil in the packet but this is cheap, lousy oil. Just give a quick rinse to get rid of most of the oil will do

i think char is maybe the wrong word to use. More like a sear. basically when you leave the noodles to sit long enough, it will develop a caramelised sear, or that charry taste. this is a more practical way to imitate "wok hei" at home since most of us wont have a seasoned wok + big fire at home to achieve restaurant-level wok hei

i know :/ if i were to make this now, i would mix in the sauces in the noodles before pan frying so i don't touch them as much in the wok! and maybe get better quality noodles :P

Nuuuuu =[ the cornstarch slurry is suppose to thicken it, sorry it didnt work! Think might need to up the cornstarch amount hmm 🤔
