The reason why the atomic breath looks like "water" in the OG films was because it was basically more like a "gas breath" or a stream of vapor rather than being fire, so only later on did it resemble more like an energy beam.

Since you’re interested in watching some of the series, the Godzilla after Godzilla (1998) is from a cartoon series taking place after the 1998 movie. There’s also Godzilla Singular Point(the Godzilla with circle atomic breath), a Netflix anime series, which Godzilla has multiple forms like Shin Godzilla. You’re gonna have to work your brain a bit for this series as it’s very scientific.
Fun fact: shin Godzilla was apart of Shin Japan Heroes Universe wich has 4 character name Shin Godzilla of course then the other three is Shin ultraman from the ultraman franchise, Shin kamen rider from Kamen rider series and shin eva-01 from Evangaleon. Godzilla Heisei (1991-1995) is not a show, it's just the phase of his movies where the design went through the least amount of changes. Godzilla and Mothra: The Battle for Earth, Godzilla vs King Ghidorah, Godzilla vs SpaceGodzilla, and Godzilla vs MechaGodzilla 2 all feature this design. If any changes are made, they are VERY minor.
The anime trigligy had so many good ideas like godzilla terraforming the earth forcing humans to leave & making life of his own, & having mechagodzilla be a city as well as having ghidorah be a god from voids. But all 3 of the films were portrayed so badly
And it had a damn good backround history that has so much potential than what we got in planet of monsters trilogy that was fleshed out in two light novels that took place before the planet of the monsters. It had brought so many kaijus into the fold that those movies missed out on

There are two Godzilla anime things on Netflix. The first one is an anime movie trilogy. This series took Godzilla into a direction which I really enjoyed so it’ll be a cool watch. The other one is an anime series (about 13 episodes) Godzilla: Singular Point. It is similar to Shin Godzilla in some aspects but it is definitely a ride if you intend to watch it.

What You saw at the end were few of Godzilla enemies out of many.. Next to Ghidorah You saw SpaceGodzilla and Gigan, they're both from space like Ghidorah. Also Megaguirus and Kiryu(Mechagodzilla). You should watch first Gojira, for 1954 they did amazing movie.. And Heisei Godzilla was not series ^^ It's just this type of Godzilla was seen in movies during that time :)
