4 cups of Watermelon Cubed
1 English Cucumber, peeled seeds removed and sliced
1 bunch at least 1/2 cup Fresh Mint leaves
1/3 cup Raw (preferred Aurora Brand) or Lightly Salted Unroasted Pistachios
Simple Lemon Poppy Seed Dressing
Put first 5 ingredients in a mini blender and blend until creamy, taste then add the poppy seeds and pulse to blend
1/2 Cup Extra Virgin Olive Oil
1 Large lemon Squeezed
2-3 teaspoons organic spicy mustard
1 small shallot (2 Tablespoons)
2 Tablespoons Honey
2 Tablespoons Poppy Seeds
Place extra dressing in small glass container and store in the refrigerator
