You might want to mention that the reason you monitor the temperature as a proxy for sugar content is that as the syrup gets more concentrated, the boiling temperature goes correspondingly higher. It might be illustrative to stick a thermometer in the other stages in the evapourator pan to show the temp higher in each successive stage. Thanks for the videos, very interesting to see how high-tech the business has become.

Hi Nikki, what do you use for fuel and how can you run out of it? Can the diatomaceous earth be cleaned and reused or is it thrown out? Why do you have to work so late into the night, is it because once you start there is no stoping? It's been enjoyable for me to learn a little about the Maple Syrup business and your way of life. One drawback I see to going large like your family business is not really getting to visibly see the sap as it goes through the evaporator. Although when we ran our 2’ by 7’ it was all flat pans, and we had no electricity at the sugar shack, so we also did not have a steam away. You could watch the sap the whole through. We haven’t run our small set up like that for a few years, (200 or so 3/16 taps on gravity lines down hill), and now I just boil in a couple of buffet pans with 12 to 15 taps. Make a few gallons, chilling out while doing so, and bottle it up in etched glass for giving away a bunch to friends and co workers. I do stop while out on patrol at some of the bigger (and smaller) sugar houses in our area and talk to the owners and see how their season is going. Sometimes pick up some new bit of info I did not know of before as well. You guys have a pretty awesome large scale set up. It is nice for your family that their children are still into helping with it. Real big question time, did you and or your brother stray away from wanting to help boil, or just avoid sap season in general in your teen years? This is part of the reason we stopped boiling in my woods below us. Kids no longer wanted to hang around or were busy with sports and homework, etc. shack is a bit out of the way if there is still snow on the ground so it is even tough to get the “pop ins” from friends and neighbors.
