What’s For Dinner - Easy Budget Friendly Weeknight Meals - Ritz Cheddar Chicken - Enchilada Casserole - Marshmallow Brownies

Steak Tips
Mix 1 Package Pioneer Brown Gravy Mix (Makes two cups) with two cups water and 1 can cream of mushroom soup, pour in crockpot. Brown stew meat in oil on stove, season with salt and pepper. When browned to your liking stir meat and drippings into the gravy mixture in the crockpot. Cook on low 4-5 hours. To thicken gravy make a slurry from a couple tbsps flour and water and mix into gravy, turn up to high approx 30 minutes.
Mashed Potatoes
4-6 medium potatoes (peeled, washed and diced)
Cover with water and cook until fork tender
Drain, mash a little
Add 4 oz cream cheese, half stick of butter, salt & pepper
Mash a little more
Stir in milk, season to taste
Ritz Crispy Cheddar Chicken:

Enchilada Casserole
Brown 1lb ground beef and chopped onion. Drain. Stir in 2 cups salsa, 1 can black beans rinsed and drained, ¼ Italian salad dressing, and 2 tbsp taco seasoning stirring until blended. Place 3 8 inch tortillas in a 2 quart baking dish sprayed with cooking spray. Layer ½ meat mixture, sour cream and shredded Mexican cheese. Repeat layers. Bake covered at 400 degrees for 25 minutes. Uncover and cook additional 5 minutes. Let stand 5 minutes before serving.

Here’s a link to a local shop that sold Robin Payne’s cookbook. I don’t know if they still have any in stock or not. It doesn’t have the enchilada casserole in it but it is so much better!!! It has all her family’s recipes and the stories and people behind them. You would love this little treasure if you can get your hands on it.
