In this video, I'll be sharing with you what I eat In a week with pre diabetes / insulin resistance! Well.. kind of. It'll be more like What I eat in a week as a pre diabetic but... really just 4 nights of dinners. It is a random hodge podge of food that I feel comfortable eating with insulin resistance and undiagnosed pre diabetes when it's just me that I have to worry about feeding. Hopefully you can see that we still have a large range of food to choose from even if we have metabolic dysfunction.
A little bit about my blood sugar journey... I was told I was insulin resistant in 2017 after a glucose tolerance test my reproductive endocrinologist ordered for me when I was having trouble getting pregnant. And after conceiving, I was diagnosed with gestational diabetes very early on. Since then, I've been diligently learning about blood sugar dysregulation and gathering data through constant finger pricks and CGM experiments since I am now at greater risk for developing Type 2 Diabetes in the future. I've learned A LOT about what works and doesn't work for my body, and how my body responds to different foods. I hope this video helps you on your path to a healthier lifestyle! I was also prediabetic, but my last a1c is 3 points below the 5.7 now. I consider myself a moderate keto eater with 2 meals a day and a low-carb snack in between. For the first 6 months after diagnosis, I was more strict keto. I have added back some legumes, my favorites are beans since I grew up eating lots of them. They do not raise my sugar by much anyways, and I accompany them with some fat like I toss a couple of eggs or some meat along with them. I used to eat bananas like crazy, nowadays I only eat half like twice a week. Everybody's metabolism is different diabetic or not, and what works for you may not work for me. So I think that if your diet keeps you in check that's what you need to do. I am also a lean insulin resistance person, but my genes are against me, plus stress and family situations. I am now working on minimizing all that stress (cortisol raises BG too) and I only do for others what I can whether they like it or not. Take care and continue on with a good job!

Thanks for sharing your story! Good for you that you're a1c is down 3 points! Awesome job! My A1C is also in the normal range again, but I know if I go back to eating a lot of carbs, it'll shoot back up again. Beans with eggs and meat sounds perfect. I don't know about you, but giving up foods that are a part of my culture was so difficult, so I'm trying to stay true to my roots by eating things, just in moderation. And I love that you're taking a holistic approach and focusing on stress. In my pasta blood sugar video, my blood sugar spiked like CRAZY because of stress. It truly does play a big role in blood sugar management. Thanks so much for watching!
