In years past, I had always taken fresh corn on the cob, cut off the kernels and done them in the pan that way, for charred corn. Not having fresh on hand, I tried to improvise and it worked pretty well! Tomato gravy is very southern, so I'm a wee bit surprised to hear that your DIL from Oklahoma is familiar with it. I love homemade mashed potatoes too BUT I do also love some instant potatoes. When I was a kid my mom always used instant potatoes flakes. Not those little packs they have now though just plain potatoes flakes. She also breaded chicken tenders or pork chops with those potatoes flakes and still to this day it's one of my fav ways to make chicken. The potatoes flakes on chicken...when u pan fry them the potatoes flakes taste like potato chips and it's so delicious.

Yes meat prices have gone up here too. Our freezers are stocked with chicken breasts and thighs, steaks, roasts and ground beef, sausage and pork chops. I don't have to buy meat at the grocery store very often

I didn’t know you could buy egg drop soup packets. I will have to give it a try. I haven’t had open faced hot roast beef sandwiches in decades. When I lived in the South & worked in a doctors office there was a restaurant next door that was their specialty. You inspired me to add that to my menu plan for next week.

Yes, sometimes I love a shortcut and using a pre-made packet for egg drop soup is a big time saver :) I love making Chinese stuff, but it often ends up as not only time intensive, but dish/pan cleanup intensive too, LOL! My Kroger (maybe Fred Meyer for you?) has their brand of egg drop soup packets too, for much cheaper than the Sun-Bird brand. I am on a roll with trying to use up things I have, so the deli roast beef in the freezer, some packaged brown gravy mix and other things worked great for me for an easy, quick meal that used up things on hand. Lots of good food there! The pork chops and fajitas both in the AF are good ideas. Chicken Santa Fe always turns out so good. You're so clever to use the leftover pork for fried rice, and some Chinese for dinner! I don't cook Chinese often enough for me, don't want to push my luck with Don I guess. I haven't had tomato gravy in years!! It is the best!! Everything is going up in price.. meat.. caned goods.. even water!! We did a Sam's meat stock up last month.. hits the pocket hard at first but in the long run saves money.. I portion and vacuum seal everything!! Have a blessed week!!

Tomato gravy is very southern, in just a few parts of the Deep South of the US, so a lot of people have never heard of it. I bet instant mashed potato flakes are American, yes? I would make them from real potatoes, but since Tim is happy with the instant and even prefers them, I like to save my efforts for other dishes most days, LOL!! Your fried rice sounds amazing! I have never thought to add corn, but know everyone here always uses peas and carrots. We are well, though we have a lot of friends and family in the New Orleans area who are still without power and likely will be for quite a while longer. Hurricane Ida tore down more power lines than Katrina and two other major hurricanes, COMBINED, and it's going to take a while to rebuild the power grid and get them electricity. This last hurricane (Hurricane Ida) brought down more electrical power lines than Hurricane Katrina (the "big" one that hit New Orleans, on the exact same day, way back in 2005) and two other big storms - combined. They have massive damage to the power grid and some people will be without power for many more weeks. Such a desperate time for so many. You and Les take care!!

I like that blend of rice too, but Tim is just not a fan of rice (and especially not of brown or wild rice). So that huge container from WM takes me a sweet forever to work through, LOL! The Chicken Santa Fe is a huge family favorite and has been for two decades or more. It does NOT photograph well, but is so easy and so versatile. Over rice, with chips, your choice of toppings, we just love it. I hope you do get a chance to try it and let me know if it worked for you! I love tortilla soup, but mine does not have rice in it. I made a chicken and wild rice soup last winter that was dee-vine though, and am hoping to make it again (this fall or winter), definitely my kind of food. Oh, and yes, I will try just about anything in my air fryer, I love it!! The fajitas work for me, easy to prep, cook and clean with my AF basket! Tomato gravy is a very southern dish, and one my mama made (and I have never tried) and something Tim's mom does too. You can take fresh garden tomatoes or canned ones (and probably even store bought canned ones, also) and cook them down into a basic gravy. Make a roux with butter and flour and add in milk or broth, and the tomatoes and season well, basically. Or I'm assuming! I've never actually made it nor tasted it, since I don't like fresh tomatoes. For the simple reason that we buy them in a large container at Sam's Club, so they are always here and on hand! That family size package I had was one I got last Thanksgiving, free from Ibotta, and it was languishing in my pantry and desperately needed to be used, LOL!! The spray bottle is actually for my air fryer, and it's my second one. The first brand I tried, Misto, worked great for about 6 months and then it started clogging up. I'm still testing this new brand, but (fingers crossed), so far so good. I surely hope it doesn't start clogging up soon, but understand the nature of pulling oil through a sprayer and keeping it flowing freely. It does make it a lot easier to prepare my basket for my air fryer, and I've started using it in other spots too when I just need a bit of olive oil. :) Looking forward to hearing more from you in the future! We are so glad you are here, and are so happy to hear that you are enjoying the content on our channel. 💖💜 Hooray for another Tim to cook for, that's fun!! My Tim is the easiest guy in the world, he will try almost everything (except maybe tofu or veggie burgers!), and is a good sport about all of the things I like to do for the channel. The rumien recipe is actually his and it's not really a recipe, so I have never typed it up and added it to our website. He dreamed this up when he was in the military and couldn't afford much more than the cheap ramen noodle packages! I just wing it with his help, but I basically take chicken stock (or water and bouillon) and some seasonings and then add plain white rice, a couple of good handfuls. When the rice is nearly done, I take the dried ramen noodle packages (we throw out the seasoning packet these days because of sodium, but you could use that if you don't have blood pressure/sodium issues) and add those. The rice will finish cooking and the ramen cooks in about 3 minutes. Then we drop a couple of eggs in, whole (not beaten) and let them mostly set and cook, and then sort of break them up (as opposed to beating them like for egg drop soup). Then add seasonings of choice (the packet, or we use several from our spice cabinet, including our favorite Tony Cachere's creole seasoning), and then we put in sliced cheese. We've tried it with shredded but don't like that as much! It comes out all creamy and carb heavy and totally unhealthy, but it's pure comfort food for us. I hope that helps! Hello My Sweet Friend! So happy you and Tim are back to your routine. I cant seem to find mine since being sick. I am getting there though. I so enjoy comfort foods. I use my crockpot year round. I made soup for dinner on Sunday in it. I made some salsa verse chicken last night that we used for tacos. Some people put their crockpots away and dont use them until fall/winter. I find them to be such a time saver. Fajitas.....I n.v have not had those in a long time. Meat is so expensive. Prices on beef have been high since covid started and are getting really high. Well, everything is going up chicken, pork, beef.....all food is. Everything you purchase is. Inflation is just fantastic. *sarcasm*🤪 I have never had tomato gravy....sounds interesting. It all looks delicious Stacy. My moms 80th Birthday is next week and we are having a surprise party for her. We are doing pulled pork bbq and fried chicken and we are having slaw, mac and cheese, pasta salad, devilled eggs, a cucumber salad and Birthday cake that I know of. I am going to make your Chicken Sante Fe soon for Hayley, Justin and I. I dnk if Mark will eat it but know they will. I plan to help her with some meals until she gets adjusted to having a baby. He is still not here. If she does not go before then, she is being induced Wednesday Morning. So just a few more days. I have a piece of Prime Rib that I bought at Christmas for $3.99 a lb. Saturday night I am going to roast it with some small potatoes and cook some fresh green beans and make a Wilted Leaf Lettuce Salad. Mark does not like Prime Rib so I am going to make a big skillet full of Salisbury Steaks too. I then will leave all the leftovers at her house so she has dinner for Sunday too. My piece of Prime Rib is not real big. I think it was about $15. So between that and the Salisbury steak she will have several meals already cooked. Tell Tim's mom Happy Belated Birthday. I have never had tomato gravy. I have had white sawmill gravy with biscuits and growing up when we had sleep overs at a friends house her mom made Chocolate gravy. From what I remember it is like a Thinned out Chocolate Pudding that we ate poured over biscuits. I have not had that in probably 45 years or more. I have never made it. I am not a huge sweet breakfast eater. I very seldom ever make pancakes or waffles. Maybe once every 2 or 3 months I make French toast with the Sara Lee Artisan Brioche Bread. I do not like Maple syrup over it. I usually make a mixed berry compote to pour down over it. I also like to eat Greek yogurt and berries before bed sometimes. We eat dinner about 4:30 in the afternoon and I stay up til very late so I can sleep some with Mark during the day. So often at 12 or 1 am I need a snack. I like the Greek Gods brand of Honey Yogurt that I can only find at Kroger. I eat it with fresh berries or cherries. Last night I had the yogurt with fresh blackberries that came this week in my Misfits box. I also have a pint of raspberries this week to eat too. Stay safe and take care of yourselves. The virus is getting crazy again here.

It is not spicy at all (because I'm a total spice wimp), but just flavorful. The front of the bottle says "with salt, chile pepper, cheese, chipotle and cumin". I have actually never made it myself, and I was visiting with my father-in-law in the den while she was slaving over a hot stove for her baby boy, LOL, so I didn't actually see her make it. But Tim said she used a can of her homegrown and canned tomatoes. I can check with her, if you need me to, just let me know! I think is essentially just a gravy with either stock or cream and then a tomato puree added.... 🙄
