What the HECK is SEITAN?? Why should you be eating more of it. according to me at least!
I just made a video about TVP and I wanted to talk about another amazing plant based protein and that is seitan! Its incredibly easy to make, its super cheap, and its REALLY filling. Seitan is wildly versatile so you can use it in loads of different dishes from stir frys, pastas, soups, chilis, sandwiches, or tacos!
I love this stuff, honestly we eat it at least once a week, and after this I bet you will too!

Between lentils, Tofu, Seitan and TVP I never really run out of variety... and most the time I am not trying to make it like a meat, but more give the sensation of meat and very low effort yeilds that using seitan particularly.

This looks awesome! I’ll have to try it! As yet, I’ve only made washed flour type seitan. I tried many recipes including several of yours. They were good but, to me, always tasted like bread and meat or pasta and meat at the same time, never just as a meat analog. Im curious to see if using straight up gluten flour will make a huge difference.

It is a thing in China called kaofu, put some sugar with the yeast and try to bake it for a few minutes next time.

I love the video and love seitan! But seitan isn't a complete protein, it is low in lysine and threonine. Of course thats not an issue if you eat a varied diet, but just a heads up

I got the Anthony's vital wheat and tried making this. I screwed it up somehow and It was really chewy. Anyone has pointers on how to make it not so chewy?

Making your own gluten the added bonus is the water which can be used as broth, and the starch which can be made into glass noodles.❤

looks interesting; I ordered and received last month textured mushroom protein; the small chicken nuggets were not great but I didn't add any sauce to them; I did received breaded cutlets and cutlets flavored like steak. the chicken cutlets were good and I expect the steak flavored ones will be good, too; but the mushroom protein is expensive so something that has a similar nutritional profile that's less expensive would be great. I read it needs to be steamed first to avoid the rubbery texture and it may contain a relatively amount of salt, which I found the mushroom protein also has.

Check out soycurls. They are dehydrated and extruded soybeans that look like fajita strips, but they can be broken down into smaller sizes. They are even less processed than TVP, considered a whole food, and about $2/lb rehydrated. Very versatile as well, I've made pepperoni and sausage crumbles from it (freezes great cooked), and use it for meals every week. Lots of recipes online for it if you look around.

@@lemonadestand4386 good to know, thanks! I found Butler founds I Oregon makes and sells it and is available on Amazon for just about the same price Butler has a recipes page, too. In moderation,like everything else, seems to be a good alternative to meat protein and definitely less expensive.

Sadly, I have to make a correction on this video - wheat gluten is NOT a complete protein. It sucks because as a vegetarian I had been using this as a main protein source for over a decade, but I recently learned about Protein digestibility-corrected amino acid score (PDCAAS). PDCAAS is a method of evaluating the quality of a protein based on both the amino acid requirements of humans and their ability to digest it. It ranges from 100 (meaning we absorb 100% of the protein in the food) to a 0, meaning we digest none. And unfortunately wheat gluten scores a 25 on the PDCAAS - meaning we are only able to use 1 out of every 4 grams of protein listed on the package. I nearly wept when I found this out, but since I have switched to other sources of protein that are high on the list (soy protein and mycoprotein AKA mushroom protein have a score of 100, pea protein has a score of 89) I have actually been seeing better results in the gym. Definitely have had it proven to me anecdotally since the only thing I change was replacing seitan in my diet.

I thought soy, mushrooms and pea protein ranked a bit lower and chickpeas specifically were above them? I'm not so familiar with that method so I very well may be remembering this wrong.

Can someone please tell me what gluten flour is? I live in Germany, have lived in England, and have never come across it. I've tried googling and only come across gluten-free flour. Does it have a different name? I'd love to be able to make Seitan so quickly- I absolutely love it and only buy it ready made because I've never yet wanted to wash flour for (seemingly) hours

Gluten is not a complete protein. Although it contains all essential amino acids, it doesn't have them in sufficient quantities, particularly lysine.

Can anyone help me? I'm a pretty good home cook. I watched the Stache video on seitan with nutritional yeast. I followed it to the T, the only thing is that I can't steam the nuggets before frying, because they made a disgusting sticky mess of my steamer. So instead, I boiled them and coated them in flavoured crumbs before frying. No matter what I try, seitan nuggets come out like a cross between a pancake, a matzoh ball and a rubber hockey puck (or maybe the little eraser on the end of the pencil). They're okay, and I usually make a loaded sandwich out of them, letting condiments, fried onions, and burger-style veggies steal the show. But they're not "mmm mmm delicious" or anywhere near deserving of the reaction Monica has, and they taste nothing like chicken nuggets. Any help welcome.

Just a single person who makes all my own food at home. Your “Not Steak Sauce” intrigues me, but can’t really personally afford $12 a bottle. Is there a way to try it out? Is it in your recipe book?

Love all your videos! I notice you use a lot of cartons of vegetable broth. In lieu of carton broth, I make a fake chik'n broth powder with nutritional yeast and spices and just add water to it. It's so economical and I think more earth-friendly. I use the recipe online called Bryanna's vegan chicken broth, something like that. It calls for adding soy protein powder, I skip it, works fine for me. I'm waiting for some soycurl recipe videos on here too. I think when I buy soycurls in bulk from Butler the manufacturer it works out to about $2/lb rehydrated.

i recommend using a food processor instead of kneading with your hands. Also, add chickpea flour and/or nutritional yeast to the gluten before adding water, it makes it much less gummy! I usually use 1 1/2 cups gluten, 2 tablespoons yeast and 2 tablespoons chickpea flour, spices and 1 cup water. Because you added more dry ingredients you probably have to add about 1-2 tbsp more water.

No, I’m on a calorie restricted diet eating mostly Whole Foods. I run 20 miles a week, yoga 4 hours a week, and weight training 4 hours a week. I’ve lost the weight slowly over 2 years, I’m now down 110 pounds.

@@SauceStache Remember always purify your satan protein before you use it. A couple sprinkles of holy water or rose water should do the trick. Rose water works just as good doesn't it?

The etymology of Seitan is possibly derived from the Japanese characters for "fresh/raw" and "protein", whereas Satan is a fictional character from Judeo-Christian mythology. Different language groups.
