This is a step by step guide in making pinoy bread roll called pandesal using wheat flour. Delicious, very soft and wrinkle free bread using a home made bread improver. You can make this at home for your family or for your home baking business. The bread stays soft even for days at your table and there are lots of tips and tricks for your baking journey. Enjoy!
Wheat Pandesal (Pinoy Bread)
Ingredients:
Roux:
* 1/2 cup (125g) hot milk or evaporated milk (heat on your stove or in the microwave for a minute)
* 1/2 cup fine wheat flour taken from the 590g fine wheat flour for the dough
Dough:
* 1/2 cup (125g) fresh milk or evaporated milk, room temperature
* 2 tsp (6g) instant dry yeast
* 1/2 cup (110g) vegetable oil (you may also use other types of oil)
* 2 small sized eggs, room temperature
* 1/2 cup (110g) brown sugar
* 1 tbsp of vanilla extract or 1 tsp if you are using concentrated vanilla extract
* 590g (4 cups ) fine wheat flour (incorrect on the video but it should be 4 cups, fine wheat flour is heavier than bread flour)
1 tsp (5g) iodized salt
Filling:
cubed cheese
Coating:
1/4 cup bread crumbs
Baking Pan:
16 x 12 inch baking sheet
Baking Time:
180 Degrees Celsius for 18 to 20 minutes
Yields:
23 pcs of 50g each that you can sell for P6.00 to P8.00

Ms. Mai, how are you po? Gusto ko po muna mag thank you for your wheat pandesal recipe. I followed your recipe pero 1/2 lang po muna of your recipe. Ang sarap po niya. Next ko po try yung regular pandesal ❤. My question po ako, few of my pandesal kumakawala sa pag ka shape after 2nd proofing, what did i do wrong po kaya? Up to how much of liquid or milk should I add po, I'm using la filipina wheat flour, eh mukhang matakaw po siya sa water. Saka parang mas brownish po yung dough ko compared sa nakita ko dough mo. Pag kumakawala sa pagka shape, dagdag ka water ng mga 2 tbsp to 1/4 cup. Tapos pag mag ikot ka ng pandesal make sure nag seal ilalim at yun ang ilagay sa bottom ng baking pan. Minsan naman kulang sa pagbilog, need mo lang practice magiging aware ka na since cautious ka na kung naka seal o hindi

Yeast po ang problem, buy new one na dapat vacuum sealed or if bago ang yeast mo baka napatay because of hot milk.

I guess its about the sugar kc po I tried to use monkfruit erythritol sweetner instead of brown sugar, trying po kc ako to make it no sugar bread

Lessen sugar but not totally remove it, as it feeds the yeast while proofing. You may also use coconut sugar

In baking the pandesal, is it the middle rack to use and also is it with fan or without? upper and below heat? Also at 180 and 15 minutes sunog na yung ibabaw

Pag elec oven po up and down, baka po convection oven gamit nyo lower heat to 160⁰C.

Ang fine wheat flour kasi may kasama ng bread flour. No need to add any other flour. Unless gagamit ka ng course wheat flour.
