Oh there's a dish in Malaysia that uses this exact fish and it's super delish to eat with plain rice and it's called 'Siakap masak 3 rasa' which means 'Fish (seabass) cooked in 3 flavours' since end taste you'll get sweet, sour & spicy. When you ok fish whole you must either use dried spice or a paste if you are trying to get flavor into the flesh of the fish. When steaming fish in particular citrus juice, powdered seasoning, garlic paste and ground herbs work best. Whole slices of orange and whole thyme leaves will just steam without adding any flavor whatsoever. It's a move done mainly for presentation
I had it once in a bougie restaurant in SF. I found it impossible to eat because of so many tiny bones. I cook and eat whole fish often, but that one was the craziest mess. What do you think caused that? Was it the preparation, was it old?
Check the gills for freshness. The redder or pinker they are, the fresher. Blacky red or darkness in the gills show that the fish has been dead for a while

I find cooking the fish with fresh garlic and lemon juice is often too overpowering and ruins its delicate taste. Seasoning very lightly with a touch of dried garlic powder, black pepper and salt is the best method for me. A drizzle of lemon juice at the time of serving elevates the taste, optional though.
Man try red stripped mullet fish. By far the most unique and best fish taste. It’s nutty, buttery and a little bit spicy. Just fry it in oils and eat it with a garlic sauce on baguette slices , like a tapa.
Eyes are not always a good indicator if the fish is fresh, they can easily be popped while transporting. Fish gills are a better way to check freshness, if theyre red it means its fresh. If not, dont buy it
