Dry brine the turkey with salt 1tbs per kilo' you can leave it over night in the fridge.
stuff the cavity with rosemary and thyme and up to half a lemon plus a whole garlic.
Coals either side in the bbq with the turkey in the middle running at about 100c until internal of the turkey hits 75c / 165f basting every 30min.
Baste:
Coffee and maple syrup 50/50
Gravy:
add to a dish
2 x sliced onions
2 whole garlic
Carrots
Thyme
Rosemary
Giblets
Veg stock
A small amount of gravy
Then add about half a small bottle of cider
Add the juices of the turkey
Strain everything out and add corn flower to thicken.
Cover the turkey in tinfoil and wrap in a thick towel for at least 1hr.
