After many dry aged experiments today I test a beef tenderloin 2 different ways to find out how good butter dry age really is. To keep the test consistent, I used one tenderloin for this experiment and the results were eye opening.

The butter ageing allow u to season the steak with herb , next time try mixing in the herb with the butter before ageing . It will definitely make a huge difference

@@vallm1545 salted butter no good gonna cure the meat like charcuterie. I wouldn’t add herbs either. These are all more prone for bacteria growth due to moisture. Just age your meat in the fridge uncovered on a rack. Clean your rack every 5 days. Flip your meat every day for first 7 days to ensure it will be dry. If you want butter or herbs add it when cooking

Jdubb no we are going to clean a alive cow, cover it in a thick layer of butter and other seasonings , vacuum seal it in a massive bag, and make sure it’s still alive

When making butter and especially when using it for aging I would recommend to "rinse" the butter by massaging it in cold water a couple of times

*There is one really good thing about this experiment tho.* If there is ever an apocalyptic disaster that takes humans back to the stone age, the knowledge that dry aging with butter produces an identical taste and feel of regular dry-ageing in the modern times is definatively a very important tidbit of information for times of celebration and preservation. :)

If i wanted to try dry aging something once, i'd definetly choose the butter dry aging method, because you don't have to buy a whole equipment for it and heavy cream is not that expensive either

The equipment is way better cost-wise on a long-term if you plan to do wet aging frequently. And you also don't need the special bags that he uses for dry aging if you're going for this. But if you want to do this just once the butter is probably better

Not everyone has a vacuum sealing apparatus and the special bags. Everyone does have access to butter.

If you were just buying sticks of butter to do this I don't think you could do more than 1-3 of these before it would have been cheaper to just buy a vacuum sealer, plus you'd have a vacuum sealer for all the other things you want to use one for.

We just tried the butter aging last weekend - after we already collected some experience with wet aging in the last year. And the difference was HUGE. Maybe because we bought salted butter from the store. And used ribeye both times, not tenderloin. And although a lot of people accused us of wasting butter, I don’t see it that way. We used it to make food. And the waste of it was organic, and not another plastic bag. But man: you don’t do that everyday.

@Lassi Kinnunen that's the point I'm trying to make. Every other time they've done dry aged butter they love it. Now all of a sudden it's meh. It's because he made his own and it doesn't have the salt to break down the meat.

If you're making meatloaf the wagyu is pointless and blended meat defeats the purpose of having heavily marbled beef since you can control the fat ratio in ground meat regardless

You're supposed to "wash" butter in water, changing the water periodically until the water comes out clear. Guga probably did it but he didn't show it so I felt the need to add it
