I spend time with Nick and the Hunter Gather Cook Crew and these guys are constantly building fires and making charcoal. The blackness you see in his nails is from this process. And guess what, carbon(charcoal) is clean. Very clean. I received the same comments when I work on my smoker and handle charcoal and wood. Also, Nick and his crew have very high hygiene standards. They have to as they run camps and cooking classes. They have sinks, hot water, and soap available. The carbon from the charcoal gets inbedded into the skin and under the nail. That clean carbon is cleaner than your finger nails. So stop with the dislike comments and just enjoy some wonderful people preparing wild food.

Went foraging with Nick in the woods where his treehouse was few years ago. Collected a two course meal and drunk nettle beer. Was awesome. He's a legend

DJ BBQ We used to use charcoal and fire ash to clean our teeth. I believe there was also coal soap. No idea what's up with some people.

Ladies & Gents, thanks so much for all the interaction on the first vid- seen some epic debating going on which is great, hope you have enjoyed it as much as we did making it! I know that some of our ideals may not be to everyones taste but hey, variation is the spice of life! Even though we are avid carnivores when it comes to wild meat, we are as ethical as you can get when it comes to wild protein. Hunter Gather cook is no restaurant, its an ideal, a lifestyle and a family- the team that works and teaches on our courses are amazing and hopefully you will get to know each for their own skillset- think A-team! Context is a huge part of the Hunter Gather Cook Lifestyle and is isn't uncommon that we spend 72+ hours manning fires in the woods for cooking- so do please excuse the carbon footprint on the hands & nails, occupational hazard, we aren't that feral. My family are Native Americans from Central America and we own a farm and orchard. They survived off the land of hundreds of years and while they eat meat they think Americans eat too much of it. They joke if Americans was forced to hunt, and clean their own kill they wouldn't feel the need to eat it as much.

You're implying. We eat everything available. Iguana is so tasty when stewed in a coconut sauce. And grubs are sweet when roasted. Because Americans have food so readily available they have guilt about its use. If you had to survive off of what's locally available perhaps you would change your views on food because some cultures do not have the same supply of food, and cannot make the same choices based on guilt.

Yes, they do. Stop believing everything you see on TV and live a little. There's a season for produce. You can't totally survive off your own good if there's conditions that prevent it, like a drought or hurricane.

We're not poaching off our 100+ acre home, but my family doesn't like wasting any resource available either. They will take any opportunity to live free off the land as opposed to chartering a plane to fly to the nearest Walmart. They joke that we will never be hungry or without a home as long as we appreciate our lands.

Very interesting dish! I've come across tartare a few times at restaurants but have always been too scared to order it. Time to expand my horizons and give it a shot! Great video showing how its prepared!

I said that because of all the negativity there is on this comment section, people are shocked for a bit of raw meat and "dirty" hands so I can't imagine the scandal showing an animal get killed would create. Not disappointed. I was looking for something like this. Leave the barbecue in the backyard. For camping in the summer I just wanna pack small with some ingredients to make ceviche or poke. Make my way down to the beach. And the dream here is to dive for some sea urchin.

Haha people angry about how many people are disliking this recipe. It's like as if people have different tastes or something....I for one would never eat raw meat, that's just me. However, the video was interesting and well presented as usual. Remember, these dislikes are due to the dish, not the video.

Sneak 66 Maybe try it with really fresh meat, I don't know if a non-industrial freezer can keep meat perfectly fresh. Fresh enough for cooking, sure, but for raw eating maybe not.

Fantastic delivery and presentation, little heavy on the whites but it's a sodding Quail egg 👍 When i make homemade Tartare be it Sambar deer venison or one of my own beasts, i always slightly freeze the meat for 30 to 40 mins, makes mincing with a sharp blade so much easier. alda pech Once you get past the mental block(which I had as well), it tastes absolutely amazing! I suggest try medium-rare beef and not thoroughly fried eggs first to see that they are not as bad as your brain tells you!

Tartare is fantastic. Fresh meat is critical, and as in the video it is how you treat it that sets it apart from 'raw' meat, either through smoking or prior tenderising (which breaks down sinew - ie that chewy feeling you get with meat at times), to just chew into a raw lump of beef would defeat the purpose. The key is the preparation. Like the guys did in the video its how you accompany it too, sharp flavours work for me. I think Mr Murk has hit it on the head for many trying Tartare for the first time it is a mental block, people convince themselves they don't like it before they try it. Alda I would say it can't hurt you to try it at some point, it very well might not be for you - but it could be on the flip side of that the flavour sensation that you've yet to experience. That is the joy of food - exploration.

guys thaks for the vid. i live in america and plan on hunting white tailed deer, can i use thate for tartare? keep in mind these deer live wild i hunt .also id love to make a trip over to visit you, mostly for the english experience , but also to learn how to make food and drink with wild herbs.

While I think many people go way over the top when it comes to food "safety," deer are certainly not notably free of parasites. Unless you bought this meat from your local butcher and then took it into the woods, how do you know it isn't packed with parasites? I love venison when it is cooked properly, but you won't catch me eating wild, uninspected venison raw.

Taialth I don't mind that it's raw meat, for me it's that it's raw game meat. I don't know how it is in the U.S. or wherever you are, but here every hunted animal has to be inspected to make sure it doesn't have parasites in the meat. And even then it his highly recommended to not eat it raw. So basically when I grew up, I was told many times to not eat raw venison, ever.

great Cooking Workshop outthere! strongly encouraging to combine the project with A decent Hunter, who could bring you guys the fresh meat without wasting any of it! Why the hunters never bring a icebox with them so the meat could be saved for better chance to cook? we don't want any gutting part or eating weird animals. we only want to see hunter-fresh meat cook up and ready to eat! Hmmm, don't think that would work well where I come from. Whitetail deer can carry the trichinosis nematode. Might not be an issue with the species they're harvesting.

The ignorance in the comments section here is astounding. People. If you have ZERO idea of what your talking about when it comes to food, then don't comment. Your ignorance adds nothing other then to announce to the world how stupid you are. Eating fresh raw meat is perfectly ok, and delicious. Eating fresh raw eggs is also fine and delicious. If it's fresh, you won't get sick. It's that simple.

Uh no, it's not that simple. Eating cooked food is not risk free, but the risks are higher with raw foods. If the person in question is in a high risk group, i.e. a child, elderly, pregnant, or immune compromised, eating raw meat and eggs is a bad idea. Even if you're not in one of those groups, freshness alone will not determine how risky eating a particular egg or piece of meat raw is. Other factors like how the animal was raised and processed, what pathogen vectors it came into contact with, what geographical region the animal was raised in, and what species it is can have more effect on the risks associated with eating it than freshness. The risks of eating raw meat jump dramatically when we're talking about wild game. Game carries a much higher load of parasites and bacteria. Some species from some areas are reasonably safe to consume after following the appropriate freezing protocol, but others are never safe to consume raw or undercooked. For example, in North America the rate of trichinosis in bears is high enough you should assume all bear meat is infected. Further, in northerly regions where the hunting is good, the species of trich is resistant to freezing, so cooking is NOT optional. Eating game raw based solely on how fresh it is is a great way to make yourself or others extremely ill or possibly dead.

Petite Nols Pour les doigts, c'était une boutade ;) Mais manger une venaison crue, j'aurai vraiment peur d'attraper quelque chose. Je ne doute pas du tout que gustativement, cette façon de faire est une tuerie, mais le gibier cru, je ne pense pas que ce soit raisonnable. A moins que la viande ait été, au préalable, congelée, afin de détruire toute bactérie susceptible de nuire à la santé.... comme je le fais pour le poisson de mes sushis :)

Expected a nice take on a Scandinavian tartar dish, especially when the raw egg and horseradish came out. Died a little bit inside when he pulled the torch. Edit: And the smoke. What the hell? It's not needed at all.

Hmmm very strange, i would actually assemble it all together then smoke it, i would also expect a nice cold smoke not in that little electric smoker, i would also not put raw egg white, just put the yolk in there
