BUTTER BEAN & OLIVE SHAKSHUKA
250g butter beans
250g plum tomatoes
3 eggs
Handful parsley
80g kalamata olives (any black olive)
1 white onion
2 garlic cloves
1 tsp. cumin powder
½ tsp. smoked paprika
1/8 tsp. chilli flakes
1 tbsp. za’atar
1 tsp. sweetener of choice
Salt & pepper
SAVOURY OATS
3/4 cups oats
1 tbsp nutritional yeast
300ml broth (veggie or chicken)
1 spring onion
Optional toppings -
Egg
Mushrooms
Kimchi
Sesame seeds
Green part of spring onion
ROASTED CARROT HUMMUS
350g carrots
300g cooked chickpeas
1 garlic bulb
1 tbsp. cumin seeds
1/2 cup light tahini
pinch cayenne
1 tsp. turmeric
1/4 tsp. cayenne
1/2 tsp. cinnamon
4 tbsp. lemon juice
salt & pepper
2-3 tbsp. Extra Virgin Olive Oil
touch of water or a couple of ice cubes (optional)
