You could never build that in the US. government safety programs would have so many issues with the build. And the cost would be triple and take twice as long.

Wonderful the support you are receiving for your quest. Going fossil fuel free is commendable, but your whole exercise, should you want to push a CO2 free endeavor, needs to face reality as the boat's materials and construction will have a huge CO2 deficit that I am not willing to calculate as to the earth saving lack of poison gas released. This type of publicity can unfortunately be very misleading. Hope you do not step into this fallacy and propaganda used for very nefarious reasons.
You can eleviate some of the risk on long adventures by making water daily. Suns out panels are powered, pump is on. That way you are topping up daily, if you ever have an issue you find out while you have a heap of water in the bank.
ask the water maker guys about running the 230 ac motor for the high pressure pump using a VFD. there are VFD's that can run straight off DC input and put out 230 ac its more efficient the boat is lookin sweet!!!
