You cut the meat with the grain to put it on the skewer. Then sliced the cooked meat off the skewer still going with the grain not across.

​@@tacosesemikethink about it, you cut it with the grain to put on the skewer. So now when you slice the meat off the skewer you are going the same direction with the grain. In order to cut across the grain off the skewer you have to cut across the grain before putting on the skewer..
