• Broccoli: 200g

• Eggs: 4, hard-boiled and chopped (optional)
• Low-fat sour cream or yogurt: 150g
• Salt and pepper to taste
Method:
1. Cut the broccoli into small, even-sized florets.
2. Cook the broccoli for 3-5 minutes after the water has boiled. Allow to cool and cut into small pieces.
3. Dice the cucumber, finely chop the spring onion, parsley and dill.
4. Dice the smoked tofu and, if using, peel and dice the eggs.
5. Combine all ingredients in a large bowl.
6. Add salt, pepper and low-fat sour cream or yogurt. Mix well.
7. Serve and enjoy your healthy, protein-packed salad!
