This video idea came one night while Keith and I were doing a crossword puzzle. One of the answers turned out to be salmagundi. We had no idea what it was or even that it was a food. But as good fortune would have it, we figured we could make it into a great keto meal, which we did. That got us wondering what other undiscovered delicacies were out there. This video shares three delicious and unusual keto foods that are as fun to eat as they are to say.
SALMAGUNDI INGREDIENTS:
1 cup (224g) Pickled Herring (plain or in cream, dill, or mustard)
10 (45g) Whole Gherkin Pickles
4 oz (112g) Poached (boiled) Chicken, sliced
4 oz. (112g) Cooked Ham, cubed
2 Hard-boiled Eggs, separate and chop the whites and yolks
2 medium stalks (80g) Celery, chopped
1/2 small (60g) Cucumber, sliced
1/2 small (35g) Onion, chopped
2 cups (50g) Watercress
1/2 cup (23g) Parsley
2 Lemons, sliced
Dressing:
3 Tbsp. Olive Oil
1 Tbsp. Balsamic Vinegar
1 Tbsp. Dijon Mustard
TURKEY LEG CONFIT INGREDIENTS:
1.5 Tbsp of Coarse Salt (i.e., kosher or sea salt)
1 tsp. Pepper
1 Bay Leaf, crushed
1 tsp. Dried Thyme Leaves
4 Turkey Legs
2 cups Olive or Avocado Oil
Season the turkey legs and refrigerate for 24 hours. Rinse and place in a slow cooker. Cover with oil and cook on low for 6 hours.
ROASTED ASPARAGUS GRIBICHE INGREDIENTS:

3 Hard-boiled Eggs
1 clove of Garlic, minced
2 Tbsp. Apple Cider Vinegar
2 tsp. Dijon Mustard
1 Tbsp. Dried Parsley
1 tsp. Dried Thyme Leaves
1 Tbsp. of Capers, optional
1/4 cup Olive Oil
1 bundle Asparagus
Toss the asparagus with a tablespoon of oil and roast in a 425˚F (220˚C) oven for ~15 min. Mash the remaining ingredients and serve over the asparagus.

Thank you so much for your videos, I was the typical disaster with all my levels off the charts, too much weight, older. I have been doing this for 6 weeks and shredded the weight, it's almost scary! in addition to eating low carb, cutting beer and sugar completely. I sat in a room with 2 other people eating cakes and cookies while I watched that is how determined I am. I do 1 hour of treadmill prior to my first meal in the morning. I have to go faster and faster to keep in the fat burning zone, my heart is getting stronger. I have so much energy, I feel like a rocket and according to the BMI I am still obese with more to go! I lost over 10 kilos in 6 weeks! I can't wait for the family doc to see me! Something I have been struggling with for 10+ years!

I live in Europe and French cuisine is without doubt one of the best cuisines, the recipe with the chicken is traditionally made with duck and is absolutely delicious

These all sound wonderful! Turkey is one of the most affordable meats, too. And because you can use the oil after, its not an expensive recipe. And the gribiche sounds like something you could use as a dip or sauce for many things. It is interesting to know how much fat is consumed, but olive oil is one of the healthiest fats especially for the brain, and fat consumption is not considered a big concern with keto. Thanks so much for taking the time to research these great recipes.

I love turkey legs. Afraid of the high amount of oil even healthy olive oil. Cholesterol in my family. Too much controversy around cholesterol though

This meal would work well with fasting. Split your 20 carbs between 2 meals a day.

I would suggest the carnivore diet for one month and see your results and go from there...

@@UCONN_HUSKIES if you're losing weight then it's working. Any machine or scales that measure bmi and fat % are very inaccurate, so don't take whatever they tell you as gospel. Just use them to measure your weight.
