Today I'm sharing 3 Low Carb Side Dishes that are easy, healthy, and made fast since we're using frozen vegetables. These low carb vegetable recipes include recipes for green beans, cilantro lime cauliflower rice, and balsamic Brussels sprouts.

‘Clean Plate’ Stovetop Green Beans

(serves 3-4)
Ingredients:
1 tbsp ghee
1 shallot, diced
1 12 oz bag frozen whole green beans
4 sprigs fresh thyme, chopped (or 2 tsp dry thyme)
1 tsp minced garlic
salt and pepper, to taste
Instructions:
Heat a saute pan over medium heat. Add the ghee and shallot with a pinch of salt. Stir and cook for 2-3 minutes or until shallot is translucent. Add green beans, thyme, garlic, and salt and pepper. (I usually add 1/4-1/2 tsp each then taste.) Cook another 5-7 minutes or until green beans are warm and tender. Serve warm and enjoy!
Cilantro Lime Cauliflower Rice

(serves 3-4)
Ingredients:
1 tbsp avocado oil
1 12 oz package frozen riced cauliflower
2 tsp onion powder
1 1/2 tsp garlic powder
1/2 tsp salt
1/8 tsp cayenne pepper (optional)
1 lime, zest and juice
1/3 cup cilantro, chopped
Instructions:
Heat a saute pan over medium heat. Add the avocado oil, cauliflower rice, spices and salt. Cook, stirring frequently for 7-8 minutes or until cauliflower is completely heated through. Lower heat to low, add lime zest, lime juice, and cilantro. Stir to combine. Serve warm and enjoy!
Balsamic Brussels Sprouts

(serves 3-4)
Ingredients:
1 tbsp avocado oil
1 tbsp balsamic vinegar
1 tsp dijon mustard
1 tsp minced garlic
1/2 tsp salt
1 12 oz bag frozen Brussels sprouts, halved
1/2 red onion, thinly sliced
Instructions:
Preheat oven to 400°F. In a large bowl, whisk together the oil, vinegar, mustard, garlic, and salt. Add the Brussels sprouts and onion slices to the marinade and toss to coat. Spread vegetables in a single layer on a sheet pan lined with parchment paper. Roast for 15-20 minutes, or until sprouts are tender and caramelized. Serve and enjoy!

That had to be the largest shallot I have ever seen! I can only find French Shallots which are a fraction of the size. Thank you for providing recipes for frozen vegetables as they always seem to turnout flavorless and or mush. Literally had a bag of frozen green beans in my hand the other day while shopping and put back thinking 'why bother' it will probably be gross. Will be trying out these recipes for sure!

Love making a bowl with Cauliflower rice, black beans, salsa, rotisserie chicken, guac and spicy ranch (Greek yogurt, minced garlic and herbs and siracha)

Thanks for sharing this..I used to make this bowl all the time with white rice and quit making it becuz I can't be moderate with rice, I gorge on rice so this is the perfect solution.

A tip to get rid of the "cabbage smell/taste" of the cauliflower rice is to dry fry it in the skillet til all moisture evaporates bf adding any recipe flavorings. The only way I can palate it. 🐱

I never would’ve thought of using frozen brussels sprouts. I roast fresh ones fairly often. Why is it they cook faster than fresh? Is it because they are pre-cooked to some extent?
