I came up with these 3 delicious variations of soup by improvising! The original recipe was inspired by Tiffany @Creme De La Crumb Copycat recipe of Olive Gardens Zuppa Tuscana. Her recipe is Really Delicious! I probably adjusted the recipe to what I had on hand and just kept it.
I added the potato flakes as alternate thickener and it made a hearty filling potato soup!
My favorite though is the Zuppa Tuscana soup!
For the soup :
2 lbs of peeled Yukon Gold potatoes in about 1”
Pieces
1 lb of “hot” Italian sausage - mild for kids
1/2 of a large onion finely diced
2 tsp of minced garlic
1 bunch of kale stems and veins removed
32 oz of chicken broth
1 1/2 cups of heavy cream
1 tsp salt
Pepper to taste
Serve with a pinch of grated Parmesan and your favorite Italian bread
