For all the times that you say you are going to make a cooking video I will from this day forth boycott your channel and podcast until a cooking video is made. Between the fried rice, grilled cheese, roasted chicken, and everything else there are far too many promises without any delivery.

Yeah I absolutely loved this. I watch a decent amount of cooking RU-vid and there's so much that looks great but I don't really have the equipment, time, or money to put together. This, though? Yeah, I could do this.

Yup... I admit I'm not a great cook at all, and I've made so many of the things he's shown on videos.. completely changed how I cook. Very rarely does he do something that I don't watch and think, "Man I can do that".

Hey chef, Sam is actually from Vancouver BC Canada. He moved with his wife to California years ago and ironically he has no formal training of cooking. He simply saw a really bad cooking show and thought he could go better. Hence his cooking journey

STCG is from San Diego by the way of Canada. Started as a super small channel in his kitchen. He has grown it into an empire with several restaurants, including Not Not Taco.

@@ChefBrianTsao classic Italian cooking is essentially what Jamie Oliver is trained in because of Gennaro making Jamie his protege. They've done a lot of stuff together. He is 75 and still doing regular cooking shows

@@Nyx_2142 Jamie Oliver's you mean? He just failed massively on the business side which ruined his business in the UK. He expanded quick and paid huge money for prime real estate spots, and he blamed Brexit for the big increase on all the imported goods he had to buy for so many restaurants. He had around 70 restaurants. They still lasted 10 years as a franchise in the UK though. He has a love/hate image in the UK too which didn't help. He opened a bunch of international restaurants instead which are doing better for him

Sam is so great. One of my favorite cooking personalities. He isn't pro-grade, I don't think he's been trained, but he is fun and I think a very good home cook. He does own restaurants so has exposure to chefs and has published cookbooks. Plus his son and his son's friend do great editing/production. Cooking should be fun and it should taste good! I think Sam captures that perfectly. Edit: They are from San Diego, Frenchy. Or at least based. Sam is from Canada. Not sure where.

Sam the Cooking Guy is based in San Diego, California. Once again, Chef Paul is on point with identifying people based on the language they use. I would love to see you react to more roast chicken or chicken stew videos. How about reacting to Julia Child’s Coq au Vin (red wine) and Chicken Fricassee (white wine) video? Might be a bit long, but you can do it as a podcast with a guest or two.

Sam owns 3 restaurants in San Diego. He is definitely a pro! He doesn't know all of the culinary terminology like you guys, but he definitely knows how to make something taste good! Again, watch his Penne Bolognese video!

I'm not so sure he "doesn't know" culinary terminology... but as several have said, Sam focuses on making his show accessible to the average person cooking in their kitchen for their family. He has no issue calling something "this crazy sauce we made" rather than a proper name it may actually have. Why? Because that's what it is to your average kitchen chef.

Been watching Sam for a couple of years and made several of his recipes. He is a great resource for the home cook and I find quite entertaining. Glad you reviewed him. I watch Sam a lot. You're right Brian, I watch the RU-vid guys a lot like Guga, Sam, Sony ( That dood can cook), etc, because they're all pretty real guys just going through it, teaching everyone how to be better cooks. I've learned a ton from it. I wish you and Frenchie would make some stuff already! Loved your collabs with Guga. More of that please.

14:45 Dehydrated instant mashed potatoes are the boxed cake mix of vegetables. You can spend an hour mashing potatoes by hand, but they won't be any better (as long as you use milk and butter, of course, like you would normally).

The first recipe of Sam's I tried was the French onion mac and cheese. And it is worth every. Single. Calorie. He's not failed me yet, and he gets real creative. Def worth watching more.

We have been spatchcocking chicken for Thanksgiving and Christmas dinners for a few years because we have a family of 3. We usually use our Traeger to cook them. I always loosen the skin and put the compound butter under it. For a presentation effect I sometimes arrange whole sage leaves under the skin of the breast and on the legs, it looks kinda cool. Can't wait to try this recipe!

I love Sam the Cooking Guy! My mother's oven broke for about a month and she was doing everything in the air fryer. From whole chickens to cornbread and even cake. The only issue with the air fryer is that the chicken will go from 150 to 180 REAL FAST if you move your focus to something else.

I feel like it would be a nice idea to watch a certain food being made by a bunch people and finally get together and make it yourselves. Then you can conclude that season of watching that certain food and move on to the next. It would be a nice little spin for the channel and probably take the stress off of finding random foods and involve us to choose what food we want for the next season.

In PR we do something similar but we do it a bit bigger and fill in the center with seasoned ground beef. We call it relleno de papa. Very delicious.

Sam had a show on discovery health (?) when I was in high school. At the time I would cook here and there but he’s the one that really got me into cooking. I am by no means a chef but 16/17 years later and I still love to cook. Whenever I can’t decide what I want to eat I resort back to the first couple of recipes I learned from him. A few years ago when I didn’t know how to cook anything other than ramen, I discovered Sam’s RU-vid page. He has taught me so much. I binge watched his last 5 years or so. Same with all the other people I have discovered over the years. Thanks to these people I am a much better cook and appreciate everything they do!

Sam is great, been following him for several years now. As you said good personality, I like watching him cook cause he gives the impression that you can do it too. He's canadian transplant to san diego. He owns a couple restaurants there so yea, he's trained. It's funny several years ago behind him on the patio there were a gang of pot plants..

I agree, Brian! I just barbequed Bone-In, Skin-on Chicken breasts and thighs two nights ago over charcoal and hickory wood. I put a rub on them, and low and slow for an hour while basting with my own barbeque sauce. ALL of it was super tender and juicy when it hit the table. TWO THINGS... I think you MUST use Bone-In for low and slow chicken grilling. The marrow helps the meat stay juicy. And two, I think the barbeque sauce (as it caramelizes) helps to hold some of the juices in the meat. What do you think, Chef??

I spied with my little eye...that aviator's watch (Bulova or Breitling, perhaps?) This is a solid recipe. I did the "brick" chicken for years, before I learned about spatchcocking. The chicken cooks so fast and so evenly, and is very juicy! Had fun watching Frenchie give it the seal of approval. Dehydrated mashed potatoes have a place in the culinary world!!! Great for thickening potato based soups etc... GREAT video, gentlemen!!!⌚ ✈🐔🦴

I do a very similar recipe and I sometimes use an airfyer. If I don't spatchcock the chicken I put lemon wedges in the cavity. But under the skin. Not on top. Lol. Always save bones and backs for stock.

This is so close to being my go-to chicken recipe. He added parsley and soy which I don't normally use, and didn't have sage which I normally do. I may have to try this next time I do chicken

I use instant but instead of water I use chicken stock, and instead of using just salt to season them I use a poultry rub that I have. Turns out great.

I'm 100% with Frenchie on the instant mashed potato thing. I use them all the time for my cooking or as quick sides for dinner. Though instead of butter I usually save up the grease I have from making bacon in the mornings and use it in the potatoes later. Gives it a very strong bacony flavour along with the potato taste.

I love cooking chicken wings in the air fryer, I season my wings with Sazon, Goya or Badia adobo, ROASTED garlic power, and black pepper, 15 mins @ 375 and flip for the same time. It takes a half hour in the one I use, but the skin is completely crispy and the meat is still super tender and moist. So good, my friends kid who hates anything but pizza, McD's french fries, and taco bell... but she loooooves my chicken wings. Just gotta be careful not to use too much adobo as it can get salty, that's why I don't add any salt to my mixture. Not needed.

For me 1 good size chicken thigh cut up to bite sizes pieces. I use a entire lemon and the better part of a clove of garlic. Use butter and olive oil so the butter wont burn.Then i de-glaze and make rice in the pan... Ugh so good.

I agree with Frenchie, sometimes those instant mashed potatoes are really good. I think I would have added more garlic too

Instant Mashed Potatoes also make a very nice breading for chicken and stuff of that nature.

If you mox the instant potatoes with pancake batter and frozen corn they make great potato fritters

I am SO glad you guys finally found Sam the Cooking Guy. I have followed him since his Cooking channel show days. His places in San Diego are great. You need to watch his "Munchies" series. I think you would get a kick outta that. Brian, you can always use milk in place of water for instant potatoes. You can buy brands that use water, milk, butter and salt, Instant mashed spuds are a great shortcut to gnocchi too
