Yeah I agree. I tried it again this year with the blender, then went back to the molcajaete. I also like to add as much blackened skins as I can. This is such a great recipe and it's so healthy.

I'm actually going to try that way. I'm Romanian and I have in my kitchen what we call a mojar which looks quite similar to the molcajaete and we usually use it for grinding garlic and making sauce because, as you say, it makes a certain flavor come out. It's funny because I have that in my kitchen but I will have to go to a big supermarket to find a jalapeno as we have different types of hot peppers here. haha

Beautiful description of a typical hispanic kitchen. Molcajete style has a different flavor because ingredients are mashed, and not cut. Brings out more flavor and natural sweetness. Very impressive.

I made your salsa recipe and sent it over. That night I got a call from her boyfriend. "um I have a question, are you sure you don't have any Mexican in you?" Actually since I was in high school I got obsessed with it because I didn't like onion in my Salsa and the only way I could have salsa without onion was to make my own. Then I started learning how to can it to preserve it. I've never done a mortar and pestle Style salsa and I'm really excited to try it. Thank you

Yes, theres something about the course lava rock of a molcajete that brings out the flavors of the ingredients without mincing them up too finely. My mom brought one back from Mexico City in 1978 and she still has it. That sucker has some seasoning on it.

I wonder if the acid in the tomatoes is slightly breaking down the stone, or the grinding of the mortar against the pestle would also grind some of that stone into powder? would explain the change in flavor...

seeing the similarities with other cultures is amazing! in the Dominican republic they use a similar thing like the molcajete, it's called Pilon, and it's made from wood, in it we mash everything that needs mashing, from garlic to spices, it's used for everything! there is not a Dominican home where you won't find a pilon carefully tucked away in the corner of the kitchen. love your channel.

I love grilling an smoking my salsa. First trip to the Yucatan, I made sure to learn new spices and hierloom varieties. Many things there are different than Missouri but this year im growing chaya! Cant wait to experiment, well cooked of course. Lol cheers!

I am always trying to make salsa. This looks delicious! The charred veggies must give it a whole new dimension of flavor.

For sure and the beauty of salsa is that the combinations are endless...so many different type of tomatoes and peppers to use you can char boil or even use them raw and just play with different combinations like you can char the tomatoes and peppers and leave the onion and garlic raw and the flavor component changes completely

Next time after you are done making hot sauce drop it in a pan with a little flour then cook keep mixing for a few minutes until you see the colors change a little darker. You will have ranchero sauce, will be the best thing you have ever had. You can add to anything also great with tortilla chips.

I'm Italian and my wife is Irish/Spanish. I grew up eating traditional Neapolitan food. She makes the best lasagna; everyone on my side of the family agrees. You don't need to be the same nationality as the food you're cooking to make it authentic and good.

Hi. I ended up using my cast iron fry pan. And my hand held blender after everything was chard but oiled my pan 1st. Turnout out soo good. Thank you. Will be making this again for sure. Everything I used was from our community garden used green red and yellow peppers along with with everything elsewhere oh and fresh celery raw. ✌🏾
