Bear is back in the kitchen and this week, we're whipping up a refreshing and vibrant dish perfect for any summer gathering - Peanut Coleslaw with Soba Noodles and Golden Tofu! Packed with crisp vegetables, a creamy peanut sauce, and savory tofu, this dish combines a beautiful array of colors and flavors that's sure to impress. Join me as we slice, dice, and mix our way to a delightful meal that's as nutritious as it is delicious. Let's make it together!
Ingredients:
½ purple cabbage, finely sliced
⅓ green cabbage, finely sliced
1-2 carrots, finely sliced
⅓ red onion, diced
1 knob ginger, diced
6 cloves garlic, diced
⅓ cup sesame oil
¾ cup peanut butter
⅓ cup rice wine vinegar
⅓ cup soy sauce
1-2 tbsp honey
Soba noodles
1 block tofu, diced
Oil for frying
Sriracha and hoisin sauce for seasoning
Optional toppings:
kale flowers
green onions
sesame sticks
Directions:
Prepare the Vegetables:
Using a mandolin, finely slice the purple and green cabbage for thin, even pieces. Likewise, slice the carrots and dice the red onion.
Make the Peanut Sauce:
Combine the diced ginger and garlic in a mortar and pestle (or food processor), and grind into a paste with ⅓ cup of sesame oil.
Add ¾ cup peanut butter, ⅓ cup rice wine vinegar, ⅓ cup soy sauce, and 1-2 tbsp honey to the paste.
Mix until smooth.
Cook the Soba Noodles:
Bring a pot of water to a boil and cook the soba noodles according to package instructions. Drain and set aside.
Fry the Tofu:
Heat oil in a pan over medium-high heat.
Add diced tofu and fry until golden brown.
Near the end of cooking, season with Sriracha and hoisin sauce to taste.
Assemble the Dish:
In a large bowl, toss the sliced vegetables to mix.
Prepare individual bowls by layering coleslaw, soba noodles, and fried tofu.
Drizzle generously with peanut sauce and toss to combine.
Garnish with optional toppings like kale flowers, green onions, and sesame sticks if desired.
