Greetings! It is the return of the Chicken Divan! Two or three years ago I posted a video recipe of this dish, chicken divan. I had to remove it for copyrighted music issues, but had posted the recipe on my website.
Since we hadn't had this since I last made the other video and since my family had been asking we thought it was the perfect opportunity to make another video so that we could share this amazing and decadent casserole with you!
Chicken divan has it's roots in the 1950's when men wore suits and hats and ladies wore dresses and hats and gloves to dine out. So much different from today's hurried lifestyle. This casserole harkens back to a time when life was taken just a bit slower and may have been savored a little bit longer.
I got this recipe from a friend of mine. She always promised to give it to me and never did. It was one one those things that she was very prideful of. She made this casserole for me when both of my children were born and I was welcomed home those evenings by this piping hot and satisfying casserole filled with chicken, broccoli and the most amazing rich sauce you have ever tasted.
The original recipe made so very long ago probably started with a very complicated sauce involving eggs, milk, a roux etc, however this casserole is made easy by the addition of cream of chicken soup. Not something you see me use many times, however there really is no substitute. If you can find the Pacific brand condensed cream of chicken soup that is the one you should choose. It is organic. I have shown the old standby, Cambells, and because this is a "sometimes food" you should not feel guilty about using that.
This casserole will easily portion out for 12 servings. I usually only serve this with a green salad and a crusty loaf of bread. It is rich and delicious and you won't find that you need any additional side dishes to go along.

Dear Noreen, I am probably old enough to be your Mom. Having said that, I would like to say I think you are Absolutely Wonderful! I love your exuberant attitude, and the way you present your recipes! Yummmmmmmmmmm. I'm glad hubby and I are not the only ones who treat our dogs like children! it's hard but best to ignore negative people, they will steal your joy and your peace of mind if you let them. They must be truly unhappy people. God Bless.

Thank you Noreen for Sharing this recipe! My mom use to make it when I was a kid and I never got the recipe from her! I will make it for sure and I am like you... I don't care what other's think about what I cook at home. No it isn't everyday fare but it is nice to have that special recipe for spoiling ourselves and families once in awhile! I made this with turkey leftovers and it was AWESOME!!! I went to your website and got the recipe and laughed when I read your description of how you got it. Good thinking!! I never understood peoples' reluctance to sharing recipes. I have always taken it as a compliment when asked for one. Really it's the highest praise one can receive on their cooking! Your puppy made me smile, he has the cutest begging pose. I love Chicken Divan, haven't made it in years but it is a delicious casserole. If anybody is worried about the calories, just don't eat a huge amount! I wish I had some now! I always enjoy your videos. Best wishes for 2018!

My mom used to make this and I love it! It was a little different though ... she used cream of mushroom instead of cream of chicken. She also used a little lemon juice and curry powder in the sauce. She also topped it with buttered breadcrumbs. I would want a giant dish of this lol! Ignore those trolls -I love your videos and your family!

Great recipe! It's so easy to put together after we come back from Costco. We always pick up a rotisserie chicken and a big bag of broccoli. So easy to make the sauce. It reminds me of a chicken enchilada casserole I used to make. The boys are gone and married but it always was a favorite. It reminds me of church potluck dinners. It was a special occasion to exchange recipes . Those dear women are gone but the recipe cards stained and yellowed remain.

Thanks for sharing. My mom used to make this recipe for special guests. She served it with a salad in a side bowl. That was back in the 50's, so back then every meal also had bread and butter on the table along with carefully folded linen napkins. Paper napkins were pretty much unheard of. I loved chicken divan then, ( don't think mom used canned soups because that would be an insult to serve guests canned anything) and she probably used fresh broccoli, but I am picking up the broccoli and canned soup tomorrow and making this for dinner. Thanks again and if anyone has anything insulting to say renember this: A family where everyone is slim and perfect usually has a cook in the home that really cannot cook. Btw, I'm old enough to be your grandmother and yes I am a great cook. Everything from scratch and I also cook a lot of international recipes from India, China, Japan, Africa, Polynesia and more. Delicious. I made it but put some cayenne pepper and 1/4 teas garlic powder, and just a dash of dry white wine, served it with a green salad. Goes a long way. Thank you so much!

I appreciate your videos. I like your step by step directions. I am a former speech teacher and what you do so effortlessly is very hard for people to do. Do not let the trolls get to you. I know that is easier said than done; however, I have found that the ability to hide behind a computer screen has made some of these jerks feel like they can say anything they want. Keep up the good work. I love watching a REAL person who deals with the same issues the rest of us face.

Noreen I love, love, love, your videos. I was a chef for 12 years. Fine dining and lots of dishes no one could pronounce.. Your food is all about comfort and love. You know your way around a kitchen and it's obvious that your kitchen is a loving and welcoming place. It's what you want in a home and your beautiful little dogs are just icing on the cake. People who feel the need to actually insult anyone over a cooking video needs to get a life. This is my family's favorite too and we eat it a few times a year since I'm forced to make it whenever we go to family's house for any holiday. I do it a little different but it's basically the same. Thank you for making this video. My mom used to make this for special occasions. My mom passed away 8 years ago, but I have her recipes. Decided to try to make this one. On her recipe card there were no instructions on whether to blanch the broccoli or precook the chicken or not, so it did not and it didn't turn out! ugh! After seeing your video I think I could try to make again! Brings tears to my eyes...God bless you! Don't feed the evil trolls. They are from the pit of hell. Love your channel!

I am making this for the second time and cooking right along with the video. It was SOOOOOOOOOOOO good the first time but my husband said I shouldn't make it again too soon because it was too good and too decadent.
