Chinese Meatloaf - The Steamed Mince Pork with Shiitake and Water Chestnut

Recently I saw Babish posting his meatloaf recipe and I thought I could also show you something similar - the classic (but no one seems to have noticed) Chinese dish, STEAMED Meatloaf (馬蹄蒸肉餅)! This minced pork recipe also calls for shiitake mushrooms and water chestnut, which are traditionally the staple ingredients in this authentic dish, so you'll be able to taste the most local flavor if you try my recipe!
This dish is not the easiest dish I've made on my channel. It requires some work although I've already simplified the recipe a bit. If I have to follow the recipe of the Cantonese culinary schools in China, I believe I'll develop a sore arm very soon. Since the recipe is very local and traditional, I'm not sure whether you'll like it or not. But I hope at least I can satisfy your curiosity about what a meatloaf in Chinese style looks like!

Ingredients you'll need:
Main
+ Ground Pork - 1lb/450g
+ Shiitake Mushroom - (small) 8-9 / (large) 3-4
+ Water Chestnut - 5 (you can use canned water chestnut if you cannot find fresh one)
Sauce
+ Oyster Sauce - 1 tbsp
+ Light Soy Sauce - 1 tbsp
+ Dark Soy Sauce - 1 tbsp
+ Sugar - 1/2 tbsp
+ Water - 2 tbsp (you may substitute 1 tbsp with Shaoxing wine)
+ Tapioca Starch (or Corn Starch) - 1/2 tbsp
Garnish
+ Scallion - finely chopped
