The Chinese double-filmed milk pudding (or double skin milk pudding) (雙皮奶) is a steamed pudding that tastes between panna cotta and creme brulee! Besides milk, another main ingredient is egg white, so it is also a Chinese egg white dessert! I'm going to show you how to make this classic Chinese pudding following the traditional recipe and how to get the iconic "double film"!
The milk film is actually a product of the emulsification of the fat and the protein of the milk. So, the dessert must use milk with high-fat content. The original recipe calls for buffalo milk, but I cannot obtain it in my area. I'll just stick to the whole milk with the highest fat content I can get. I have detailed the nutrition value of different types of milk in the video.
Once you get your milk, the rest is extremely simple. Just mix and steam! Nothing complicated. And you can enjoy this warm, comforting dessert that is rarely seen in the West at home!

The film is the condensation of the fat substance in the milk. It holds a strong milk flavor. It also adds texture to the dessert. If you can find buffalo milk, you can get a thicker milk film which taste like a layer of sweeten cream cheese.
