Chocolate Zucchini Cake
INGREDIENTS
2 cups unbleached flour
¾ cup Dutch process cocoa powder
2 tsp baking soda
½ tsp baking powder
½ tsp salt
1 cup coconut oil (liquified)
1 cup cane sugar
2/4 cup packed light brown sugar
4 large eggs, room temp
⅓ cup full fat sour cream

INSTRUCTIONS
1. Preheat the oven to 350 degrees and prepare two 9” round cake pans, line the bottoms with parchment paper and generously spray the paper and sides of the pans with olive oil or coconut oil.
2. Whisk the flour, cocoa powder, baking soda, baking powder and salt in a large bowl to combine.
3. Beat or whisk the sugars, oil, eggs, sour cream, vanilla and zucchini in a separate bowl.
4. Add the dry mixture to the wet and mix just until combined.
5. Pour the batter into the two cake pans equally, bake for 25-30 minutes until a toothpick comes out clean from the center.
6. Allow them to cool on a baking rack until they are completely cool, then ice and enjoy!
