'Tis the season for Oktoberfest! But not everyone has the temperature-controlled facilities to produce a truly and traditionally lagered Marzen-style beer. That's okay. Chop & Brew found a workaround thanks to mother/son brew team Judi & Ryan Schenian. They had the great idea to brew an Oktoberfest beer, but to ferment it with a German Ale yeast. Come along for the brewday and tasting notes that will have you wanting to brew your own Aletoberfest (or Mocktoberfest, Altoberfest, Fauxtoberfest, etc.). [Original postdate: September 18, 2013]

I have to stop watching Chop & Brew when I'm at work. I'm now hungry and dying for a cold oktoberfest and I don't get out of work for another 3 hours!!!! :) Seriously, great episode Chip. I'm going to have to try that sauerkraut recipe this weekend. Loved seeing him and his Mom brewing together, that's just too cool.

I highly recommend the Cool Brewing Fermentation Bag from Nikobrew as opposed to the swamp cooler. I have it and it's great!

I made a Vienna/Saaz S.M.A.S.H. beer with Kolsch yeast for a wedding party that went over huge even with pedestrian beer drinkers.

I cant say enough good things about WY1007. I just do a SMASH of 9lb German Pilsner malt, 145F 90 minute mash, either Middlefrau or Sazz hops and ferment at 53F for 2 weeks. Then I turn down my chest freezer to 34F and lager for 2-3 more weeks then bottle carb. Cant tell the difference between the lager version and the ale version!

mattzx77 Me too. I use 1007 for all my Oktoberfest beers. I don’t use the rest of this recipe and even though I usually ferment around 65-70, it still turns out great. Last year I made an Altbier around July with 1007 and then I washed and harvested the yeast and used it on my two batches of Oktoberfest although I drank one of the Oktoberfest in December-February.

Good idea. I've used WY1007 for an Alt beer and it gets some nice lager like characteristics after lagering in the keg for a few weeks like you said.

looks and sounds like it almost might fit an "alebock" more then an october. its amazing when you taste a flight of german fest beers, and get reminded how light in color and flavor profile they really our. most american micro-brew examples are totally off the mark to style. the german examples are mostly just brewed for the american market and not served during oktoberfest in Munich..nice work either way! another reason against using 001 is that it might not clear

I did something similar two weeks ago. I made a Marzen Ale/Altbier recipe that I'm fermenting with an ale yeast as well. Good timing on the video!

Great vid! I was actually thinking of doing the same for a Munich Dunkel, and this gives me hope that it would at least be close.

Ryan intentionally pushed it into a amber/dark amber color range. But man did it clear up beautifully.

'Sup Chip? I love these lager workarounds and faux-lager and lageresque things, mostly because it's really hard to brew cold in my apartment. My seasonal pipeline got messed up so I'm serving saisons right now. Bummer. I'ma have to try to get something in with that German Ale yeast, that sounds good.

Wouldn't a Kolsch be the perfect choice for a pseudo lager fest beer? Ferments fast, cool and super clean. Moderate attenuation and German.

I just bottled an Aletoberfest with 1056...didnt think to try German Ale yeast. Maybe next year. Keep up the good work Chip. When's the Cobra gonna join for a brew session though? Too long since the original 3 BTV bros were together for a brew session.

Tim Hahn I’m a Pirates fan but I go to Miller a lot. I know the roll out the barrel song. It is sweet. I took my 8, 6 and 4 year old cousins there and they know the roll out the barrel song now,
