The Christmas season is already here!
Christmas cake was the most requested.
I wonder if I can continue to make several Christmas cakes this month.
The plans for the future include Gingerbread House, Candle Cake, and Bushed Noel.

This cake is a little different from my other recipes, from fudge chocolate sheets to chocolate buttercream.
The cake sheet is fudge. And the chocolate buttercream is so creamy and light even though it has much chocolate and butter.
The feel of the sheet is heavy, but when you have it in your mouth, it melts smoothly.
My chocolate ganache buttercream is really soft and silky like whipped cream.
In addition, it was so good that the butter was hardly feeling. You will probably be surprised.
This cake is decorated with chocolate lace. I used ‘Callebaut’ chocolate with 54.5% cacao content.
They say this chocolate is suitable for crafts. There is no need for tempering to make chocolate lace.
Melt the chocolate to 45℃, and when it cools to 35℃, put it in a parchment paper piping bag and draw the lace.

75g (5/8 cup)cake flour
15g (2tbsp + 1tsp)cocoa powder
6g (1 + 1/4 tsp) baking powder
160g(3/4cup) unsalted Butter
85g dark Chocolate (Callebaut 54.5%)
3 eggs (160 g)
