I make cranberry nut bread every year at the holidays. I squeeze my oranges after zesting. My bread calls for a glaze. I use orange juice & zest for the glaze. It's delicious. I can't wait to to try it with the craisins. No more chopping up cranberries 😸 Thank you for the time saving tip.
Tip about flouring the fruit and nuts really works, do same for choc chips or anything else I add. Whenever I add a dried fruit to something though, I always rehydrate first. So boil a little cranberry juice, take off burner, dump in cranberries, stir, let sit 15 min, drain, pat dry and then proceed as normal. The fruit is moist and larger, not dry and hard bits. Absolutely hydrate any dried fruit. If a recipe doesn't call for the juice of whatever zest it calls for I substitute the juice for the liquid it does call for.

Oh my, great minds think alike. We talked about a frosting for the top after we finished this video. The bread is great by itself, but the frosting would definitely be an over-the-top move! I make amish bread/friendship bread. I usually make it 3-4 times in the winter and another time or two if I run out. I start two starters and bake all of it which makes me making 16 loaves at a time. Orange cranberry is one of my favorites.. This is going to be a good recipe 😃🙏🏻Put you some butter on that beautiful bread 😋

Hello Tom and Melissa. This is such a nice and easy recipe that combines together so well. I love the amendment you made with the cranberries. That is such a great idea to use Crainsins (Dried cranberries) in the recipe. Thanks for the tip on using all purpose flower to lightly coat the Crainsins and Pecan pieces. I still love those baking loaf pans you use. I'm definately going to make this recipe with the help of my grandaughter. This Cranberry Nut Bread recipe looks so delicious 😋Mr. Tom. I've always found it so interesting and fun when you make a certain recipe like this one and you don't have the specific ingredients that it calls for you to use, you can make substitutions by modifying the recipe to make it taste like you want it to.
This is a very tasty bread. Moist and very "orangey" and the cranberries are soft and tart. But, man is it sweet. I'll be making this again for a catered breakfast later this week and will try cutting the sugar back. 3 cups is a lot. However, I did get 3 loaves from the batter. Our pans are not flared like yours. Our sides are straight, clear, glass Pyrex. The bread is best left to cool before cutting. It's very tender. I know because I couldn't wait to try it and had to use a spoon! LOL It smells so good while baking.

Whatever the original recipe you had, this sounds wonderful and I'm glad you made the changes! I can almost smell it. We always used to make cranberry orange muffins with Craisins. But this year we tried whole fresh cranberries, LOVED that little pop of tartness. Thanks for sharing yours.
Thank you Tom and Melissa this recipe looks delicious and I’ll be making it! I make a candied Cherry and candied pineapple with chopped pecans and j use a boxed spice cake and mix per the box instructions adding in the cherries, pineapple and chopped pecans and I bake it in a Bundt pan greased and tube with soft butter and sprinkled granulated sugar all inside the Bundt pan snd on the tube , I lay 1/2 a pecan in each large scallops and 1/4 of a pecan in the smaller scallops in bottom of pan which forms a wreath on top of the cake when removed from pan ! I bake at 350 for between 50-69 minutes or until cake is pulling away from the pan and a toothpick comes out clean! Let cool on rack gif about 5 minutes then gently shake the pan from side to side to loosen then put a cake plate over the pan snd flip the cake out, let cake cool completely then wrap foil around cake and folding under cake plate ! Cake will stay moist for several days wrapped this way , even after it’s cut, but after about 3-4 days I either put in fridge or slice it and wrap each piece in Saran Wrap and put all the pieces in a freezer baggie and freeze and take out slices as needed to defrost a few minutes or put in micro wave fir a few seconds ! This cake is delicious just as a snack , a dessert or with morning coffee for breakfast , I’ve been making this cake for over 50 yrs since I made the recipe up and make it every holiday because everyone loves it , so I buy extra candied cherries and candied pineapple every year to have extra all year long!! My mother always made cranberry bread for gifts for teachers, the mailman, and family friends. I can't tell you how many pounds of cranberries I cut, she would make 20 or 30 regular size loafs and 50 to 60 mini loafs. The first Christmas after she passed I tried to make a few loafs, they didn't cook in the middle.

Looks really good. The ends are my favorite part of homemade breads. I even like the ends in store bought bread, although they're usually not great for sandwiches. I save those for sopping up sauces from Italian food.
