Ingredients:
Bread improver / sponge dough
instant yeast 2 tsp (7grams)
sugar 1 tbsp
warm milk 1 cup
mix all together and let it bloom for 5 minutes.
all purpose flour 250 grams (2 cups)
mix all purpose flour with the bloomed yeast mixture and let it rise for 35 minutes. until doubled in volume.
Second dough: or main dough
all purpose flour 250 grams (2 cups)
powder milk 2 tbsp
salt 1/4 tsp
sugar 137 grams (2/3 cup)
yolks 120 grams (7 large yolks)
butter 70 grams (softened)
homemade bread improver
Cream cheese filling:
cream cheese 200 grams
butter 100 grams
powder sugar 175 grams
salt 1/4 tsp
vanilla 1/2 tsp
milk or cream 2 tbsp
Toppings:
1 box cheedar cheese
Oven temperature: 150°c I'm using gas oven
baking time : 15 to 18 minutes
Note:
do not over bake to prevent the bread from drying
do not over proff to avoid sour taste bread.

Ginawa ko to recently: May 8, 2022. The best ensaymada recipe I’ve got! 10/10 tlga! Thank you po for sharing this recipe! ❤️❤️❤️ Super lambot at masarap tlga!! I made 26 small ensaymadas from this recipe, di tumagal ng 2 days. lmao 😅 - Mainit ang temp sa bahay nung ginagawa q to kaya mabilis ang pg rise ng dough q, (approx. 40 minutes) 🙂 Just follow the recipe: - binawasan q lng ng kaunti ang powdered sugar for the cream cheese filling. (even tho i have a sweet tooth) - i substituted Quickmelt cheese for the cheddar cheese (pra malambot dn ang cheese at di gaano ka-salty) - DIGITAL WEIGHING SCALE is most accurate talaga. So pagdating sa dry / solid ingredients, it’s best to use a digital scale. (go by weight, NOT by VOLUME) ; and Volumetric (ie. cups, tablespoons, etc) is for liquids. PERFECT TALAGA! 😭👌🏻❤️ Gusto nila aq gumawa ulit. lols Gagawa tlga ulit aq kasi ang sarap talaga! 😂😅❤️

and today… i’ve finally found the best ensaymada recipe… GRABE suppeeerrrest softest and sobrang nagustuhan ng mga colleagues ko.. Hinding hindi ka mapapahiya sa recipe n to pramis 👍😃 I made this the whole dawn, kya KO maghapon, matagal ang restings pwo it’s all worth it pag natikman mo n finished product… mapapa “Patience is a Virtue” ka nlng talaga 😁👍💜 Thank you for sharing your recipe 💜💜💜

I can’t believe I have finally found a recipe that’s not intimidating to bake. For years I’ve been looking for an ensaymada recipe that’s very close to the taste and texture of Mary Grace or Cunanan of Manila. Grabe, ikaw na the best ka 😍 I no longer have to ask my mom to buy me ensaymada from Manila to bring back here sa States 🙌🏽. Thank you for sharing and please continue developing recipes that are mouth watering 😋.

I tried your recipe ( except for the filling ) the other day and it’s the softest, fluffiest, and super moist bread recipe I have ever baked. I started my baking adventures 2 years ago looking for recipes that would satisfy me. So far this is the best. The bread really tastes good even without the toppings. Ang word na SOFTENED.. silent T... Kaya ang tama po na pagbigkas ay... ..... SOFENED.. mawwLa na po ang T hindi Lang po kayo aware at salamat po sa napaka gandang recipe nitong ensaymada... Pinaka OK po ito at ggawin ko ito soon.. ❤❤

Mam pwd po ba convert sa cups nalang,wala po kasi akong weighing scale,like po dun sa 137 grms na sugar? , 70 grams na butter,200 grms na cream cheese,salamat po at God bless❤️

Thank you mamsh. First trial palang, perfect agad. ginawa kong half lang muna recipe kasi lagi failed ung past na nagawa ko. Sobrang sarap and lambot ng recipe na to. Nakailang attempt nako gumagawa ng ensaymada laging matigas.. I’m glad I found your recipe. Thank you. Nakagawa ako ng 8 pcs 66g s half recipe.❤

I love the Filipino twist on traditional Spanish desserts. Like "ensaimada". It's so interesting how different it is from the original yet it's just as good. Ensaimadas in Spain come from the Balearic Islands and they must have lard. That's where the name comes from because "saim" means lard in Catalan. So it means "larded cake".

Ignore her. Spanish ensaimada and filipino ensaimada are similar. And yes, the original filipino recipe called for lard.

@@rochellepereda5312 I ordered mine through Amazon. Make sure you know the model number of your hand held mixer, not all dough hooks work for all mixers. Btw, just used my dough hook for my pandesal and *_holy bejezus!_* I saved time, dirty bowls and utensil just by using the dough hook! I don't have to lug around my stand alone mixer just to make pandesal!

I made this recipe for the first but it didn't turned out as soft & moist as u did but I can say 85% but I'm already satisfied as first timer. Maybe it just need more time for kneading. I'll make again to make it perfect like yours. Thanks for sharing this video.

Looks so good I had to make it. I must admit I had a difficult time understanding. Two languages and two types of measurements I had to keep stopping to look up conversions and backing video up over and over. I see from comments no one else had a problem..its just me..lol..

Hi po! Gumawa po ako nito the other day.Super sarap daw po pinamigay ko..No fail...then today gumawa naman ako ng banana cake..Super sarap din..walnuts at cashew nilagay ko..Super sarap daw po..mamoist tlga..legit! ill try cake naman tomorrow..thanks

Truly, I tried several recipes including from the one who has CHEF added to his name and nothing comes close to yours. The texture of the crumb is superb and your procedure is so easy to follow. I made half of the buttercream only since I opted not to fill it with the icing, I like to taste the bread more than the icing. Anyway, I thank you for sharing this wonderful recipe which is a keeper.

I tried this recupe today for ube cheese ensaymada. I add 2 tbsp of ube flavoring to recipe and use purple yam as filling.. The bread is so soft, moist and not so sweet. Thank you.😘
