These crispy roasted Brussels Sprouts are a sweet, salty, spicy side dish for Christmas or just a regular old Wednesday night. Learning how to roast vegetables in an oven is a vitally important technique to learn. Roasted Brussels sprouts are far superior to blanched or boiled one. When Brussels sprouts are overcooked they give off a sulfur odor that is quite unpleasant. But when your roast any vegetable properly, the result is really amazing. This is my recipe for how to make Brussels sprouts taste good. This is also an easy vegan recipes.

Steve- although it's not Christmas anymore, I'm going to pair this with your just-premiered Penne Vodka (Oct2019), and dress the sprouts around the edges of the penne serving, almost like a wreath. One question I had on this recipe-- the first time I saw the video, it looked like you hit the plating at the end with some balsamic around the edges, but it was really agave. But what do you think about a little balsamic? Would it give another dimension?

Just want to say thank you Steve for a delicious brussel sprouts recipe. My Asian family loved it for it was their first time tasting sprouts. They said they tried once before by stir fry or boil those and they were awful.

Thanks man!! Starts with a good board. good wood. Then I rinse it under the sink quickly. Never throw it in the sink and leave it there, If I can I justa wipe it with a wet rag. If its got gunk on it, I'll either use a little soap and rinse with hot water or you can use lemon juice and salt to clean it as well and then rinse. I'm gonna need a new one soon simply because I happy to be slamming my knife in around the same spot for the closing shot and one area of the board is becoming a little jagged, but if I didn't do that the board would be in great shape.

I make them in the same way, great recipe. I add garlic and rosemary in mine, another combo is add Sichuan pepper and sesame oil. Great channel btw !

I'm 65 years old, I have never had a brussel sprout that I liked. I will try your recipe, only because everything else you have shown me has been fantastic. I especially like your pepper pasta sauce!

I'm going to try this really soon. I've always just cooked them in chicken stock which actually does work quite well. But what you learn with cooking is that browning ='s flavor.

The Brussels sprouts you're using are really clean... as sold in Europe, cleaning up the stalks and removing the outer leaves, before getting them cut up even, would be a major part of your prep.

I have a variation on this as my signature dish. roast them just like you do, but i make up this sauce, 3 parts soy sauce, 2 parts chilli sauce (i like either siracha or piri piri but whatever your favourite is), 2 parts maple syrup, a good amount of minced garlic and ginger, black pepper, reduce it down on the hob until its syrupy, stir in 2 parts lemon juice and a dash of sesame oil, coat the Brussell sprouts. You can do this as a starter and garnish with radish and spring onion for texture, or you can make a radish, spring onion and pak choy salad to serve alongside it with some simple white rice. I also like to drop the seseme oil and the ginger, replace the maple syrup with honey, and replace the chilli sauce with strong english mustard, and serve this as a side dish at christmas.

Alright man! I have to admit, Brussel sprouts are something I've only recently ventured into, I never had them as a kid. I am a pretty adventuress eater though and have eaten them a couple times recently when I have seen them on the menu. I think they have somewhat a cabbage flavor, which is what I expected from their appearance. Your recipe looks worth trying. Thanks for the video.

Love them more than you hate washing dishes and do it right away. Best thing I found is to buy the highest quality and live in fear of not taking care of them properly. No secret, soap and hot water and a Brillo pad when needed

Been cooking Brussel Sprouts for awhile now, and never with this amount of love, why wait to put the salt and pepper on after you have cooked it? Wouldn't you want to season it before hand?

I do not! But I’d just use my pizza dough recipe, break them into little balls and just bake those! That’s all that pizzerias do. Turn their dough into bread. Won’t be like soft buns but works all the same!

Next time sprinkle some balsamic vinegar over those chilies while you're waiting to sprinkle them into your dish. Then you'll have a sophisticated flavor layer and still get that vinegar that you're missing without the hot sauce. And That way you can leave out the poison agave syrup. Though if you do feel the need to up the sweetness I would suggest using honey along with your balsamic vinegar. I personally like to use an espresso infused balsamic vinegar that I get from Saratoga olive oil company, and Saratoga Springs NY or Burlington VT. For me it's the perfect balance of sweet and bitter and sour for things like this.

Just tried these. I checked them after ten minutes and they were DONE, any longer and it would have been over for those poor brussel sprouts. I had my oven set for 450 and then checked the temp on my oven thermometer, it was 475. They turned out OK, there was a lot of good crispiness by they were a bit too mushy inside.

Anything has got to be great when it's changing up the flavour of Brussel sprouts. Damn they are horrible. I grew up with mum boiling the crap out of them. Serving with butter and pepper. Yuck. I have never bought or eaten them since I left home at 18...😁. I'm married now eith older children. Soo thats a fairly long time. I've also never inflicted them on my family. I think it's too late to introduce them to my family now.

It’s never too late, on the food truck we converted 70% of Brussels sprouts haters into fans. It’s just some mental rewiring is required!

It's funny how I love this show, but I'm so over sriracha. It's a great sauce, but it gets boring. And a little too much on your food, then everything tastes like sriracha.
