Let's discover together how to prepare cruffins, a delicious cross between croissants and muffins that is conquering palates all over the world. This step-by-step guide will lead you to discover how to make this innovative dessert, perfect for a special breakfast or a refined dessert.
2. Preparation of the Cruffin Dough
Let's start by creating the base of our cruffins. We will use a combination of Manitoba flour and 00 flour, together with granulated sugar and dehydrated brewer's yeast. This mix ensures a perfect consistency for the cruffins: soft on the inside and crunchy on the outside.
3. Processing and Leavening of the Dough
Once the dry ingredients have been combined, add the egg and vanilla to the milk, mixing well before incorporating them into the dough. After working the dough in the planetary mixer and adding the diced butter, let it rise in a warm environment to obtain the ideal softness.
4. Formation of Cruffins
After leavening, we divide the dough into pieces and roll them out with a pastry maker until we obtain thin sheets. We spread butter on each sheet and roll up to form the cylinders that will become the cruffins. This step is crucial to give the cruffins their characteristic shape.
