I appreciate all the demo’s and education on this unit. Just purchased it on year end clearance and it did not have a manual. I have viewed the manual online but this is so much more informative.

Mine seems to mark better without that insert.

I have this grill and the right way to use it is straight over the open fire pot....

Where did you purchase this insert?

Have you had any problems with going straight from low temp to sear temp? I used mine for first time and it started a fire. Someone on FB group said same thing happened to him and to just increase temp slowly and walk it up to 500.

Brian Palmer I haven’t had any issues. Was the firepot completely cleaned out first? I usually check. Sometimes the ash clean out isn’t 100 percent and some pellets get stuck.

@@chefsbonus7696 It was the first day I used it. I started it again the next day and it started a fire again (at start up). After that I didn't have any problems. I'm not sure what happened.

Best way to clean the inside?

I have another video about that, but use a shop vac or pellet cleaning kit. I use degreaser wipes. A lot of folks use vinegar and warm water. I also use a flat scraper to get off all the grease and burnt food on all my smokers.

Yea, didn't seem to sear well

Wasn't bad. Since this initial shoot, I have actually taken the cap off the firepot and it heats the charcoal and ceramic inserts much quicker and at a higher temp.

Chef's Bonus does it damage the ceramic insert with direct flame?

Ryan S haven’t had issues. Over time I’m sure the briquettes will eventually crack, but they all do.
