hello I remember you when I first saw your videos maybe 6 years ago. I had deactivated my account and could never find you. I turned vegan half a year ago and was looking for dessert recipes for Xmas and I finally found you. plus your vegan this helps me out a lot because substituting ingredients sometimes isn't quite right in the end. anyways I wanted to ask if you could add butter also in this recipe?

I recently found out about rolling pin rings that you can stick on both ends of your rolling pin so that it stays an exact height above the counter when you're rolling out your dough. I wonder how it compares to that Dough EZ... I can't wait to try this recipe, though! I'm going to see how this differs from the one I found on Earth Balance's website for donut-shaped cutout cookies..

Hey Gretchen, what kind of shortening do you use for the your vegan baking? Just regular shortening or the hi-ratio stuff? Also, how different is the taste of these cookies from regular sugar cookies? I was thinking of having a cookie decorating party in my class next week for Halloween, and thought I might try and sneak these in as the base if they are kid friendly.

I use sweetex hi ratio shortening. I was really surprised at the "buttery" taste of these cookies! It was shocking! They were so good! I ate way too many and I dont normally eat heavy sugared cookies like these!

Hi Gretchen! Can I please ask why you Aquafaba in one part of this recipe to replace eggs, and EnerG Egg Replacer in another? Sorry cooking for a vegan friend, and wanted to know the difference (and if I need to buy 2 products when 1 will suffice). Thanks!

Ive been experimenting with all kinds of egg replacers, and find that the aquafaba really worked great here. The flax will give a slight nutty taste (slight, subtle) abut also put speck in the dough (which I did not want) You can absolutely use egg replacer though if you prefer over the aquafaba

Hi Gretchen, I tried make by these last night, I do t know what I did wrong, they were so crumbly I couldn't manage them, I added a bit of non-dairy milk to get them to hold together which helped but they were so hard to work with. Any tips on what I might have done wrong or what I can do next time if I run into this?

Hey there I'm sorry this happened. I will suspect it could be the measuring, if you used volume, cups measuring vs a scale? Since most people measure flour with a cup differently (meaning if 10 people measure 1 cup of flour you can bet you will get 10 different weights of that cup of flour) and since flour would be what would cause this recipe to be too dry or crumbly if there was a bit too much of it in the recipe I will have to say it was probably that? Does that sound like a possibility?

Do you need a stand mixer for the incorporating everything in the recipe? Will a hand mixer do? :/

A hand mixer would be fine until you add the flour, which would most likely stress a hand mixer, so that part you should do by hand with a wooden spoon

Gretchen I really respect your decision and I really love the idea of vegan recipes, but I need your help I have to do some cookies for my little daughter for her birthday, I used to prepare your old recipe which I can't find now, I would like to use this one but unfortunately I don't have aquafaba so how can I manage without it?

Haneen Shbaita hi thank you. Did you know that aquafaba is simply the water from a can of chickpeas? But if you still can’t get that, do you have flax seeds(meal)? These ingredients help to bind the recipe similar to what the egg was doing I the original. You can honestly just add another couple Tbs water or plant milk to replace the AF and it will still work! Eggs are over rated, most recipes don’t even need a replacement

I don't know what I did wrong but while yours looks sticky and gooey out of the bowl, mine was a hard crumbly mass with no taste. I found that 1 cup of sugar wasn't enough and the dough didn't taste like anything. I had to add more aquafaba and sugar in order for it to come together at all. I also didn't like the taste of that vegetable shortening as it had no buttery taste at all. I have it chilling now in the fridge. I really hope this still works just wish I knew what went wrong 🙁

Hmm, I made this recipe many times (as have others) so my first thought is that it could be a measuring error? I will link to my original recipe (non vegan version) for this same dough and I did mention in that video that this base dough is just that "a base dough" to carry the sugar from the icing, or as a tart shell. So it is meant to not be too sweet as a traditional shortbread cookie would be where that is taking center stage. This is more of a sucre dough where it is very basis. Gretchen's Bakery hi Gretchen! Thanks for the info! As I suspected, the dough was very crumbly and never was able to get it back together so I redid it using vegan butter sticks, a little extra sugar and 2 tablespoons of aquafaba and 2 tablespoons of almond milk. And it came out really good! So good my entire family has begged me to make more!

they are sort of both! Crispy outsides and soft insides, the icing also stays softer, not like royal icing that dries super hard

can you get oils? Specifically a brand I am familiar with is LorAnn Oils, they are mainly used in flavoring candy making (like lollipops) so a little drop goes a long way so that would be great here!

maybe a video on how to get the perfect icing consistency for different things. like, I think the outline is supposed to be thicker so it stays in place, but the flooding part needs to be thinner so it'll actually smooth itself out, but then the details on top need to be an in-between of the two so if you're doing dots you won't have spikes at the top if they're too thick or flattened circles if they're too thin. Or am I overthinking things when they're all supposed to be the same consistency? I've made this recipe about ten times now and I can never get the icing decorations the way I imagine it in my head. I also saw someone adding like a border of connected dots (I don't know what it's called) and can't for the life of me figure out what consistency I need to be able to do it.

I have an option to skip forward for those who don't care about what Im saying. (Many people do though, and when I stopped talking they were sad. I have many followers who enjoy hearing me talk, but I understand many do not- so that's why I started the skip forward button, just look for it in the description below all my video) thanks for watching nonetheless
